Goodlife Foods

This week I have tried some of the Goodlife food range. They are available to buy in Waitrose, Ocado, Booths and Iceland Warehouse Stores.  I have some Coriander & Cumin Falafel, Wensleydale & Spinach Sausages and Mushroom & Spinach Kievs. They are suitable for vegetarians and made with all natural ingredients. The Falafel are delicious! They are perfectly flavoured and have exceeded all my expectations! They cook from Frozen in 15 mins and make a great tasty meal at just 1 syn each. I served mine with roasted veggies. They are also Gluten Free. The sausages are half syn per sausage and packed full of flavour. I absolutely love them. The perfect low syn sausage!  The Kievs are 12.5 syns each and a perfect way to use smart syns. They are lovely and cheesy. I serve mine with roasted carrot chips. What I love about Goodlife is that they use natural ingredients and the products allow me to include meat free meals into my meal plan, without compromising on flavour. Slimming World on Holiday

Right... earlier today SW posted on Facebook asking people for tips for holidays! Most of the 'tips' were along the lines of 'enjoy yourself' and 'forget the diet', which is fine for some people, but there were not enough genuine supportive tips for my liking! Sooo... As a Diamond Target Member (maintained 8 stone plus weight loss for over a year) I have some valuable tips that I'd like to share and that I used while on my all inclusive holiday back in May, which you can read about here! Let's get down to some facts... Enjoying yourself isn't determined by how good or bad you eat. You do not enjoy yourself less by making the right choices. Don't let people make you think that enjoying yourself HAS to involve bad eating and NEVER let anyone make you think being healthy has to be turned off like a light switch - it doesn't! Slimming World Banana Bread

Ingredients: Self raising flour 50g** - 8 syns 150g Mashed Banana - 6 syns 4 eggs 1 tsp Baking powder 1 tsp vanilla extract 1 small cup Stevia (or sweetner of your choice) **Healthy Alternative** Grind your own flour from oats (50g oats) in a food processor and use in place of flour. This is a B choice plus 3 syns, taking the overall syns down to 9.  Please check the syns on your brand of flour to protect your weight loss. Sift flour and add in two of the eggs, 2 yolks, banana, baking powder, vanilla, and sweetner and mix well. In a separate bowl whisk the whites of the remaining two eggs to stiff peaks. Fold the mixture together and place in a cake tin or loaf tin. My silicone case is 20cm. Bake for 25 minutes at 180° fan. Cut into slices are serve. Divide the syns by the no of slices you get. I cut mine into 4 at 3.5 syns a slice.  I served mine with a tsp of cashew butter and flavoured quark for a lovely dessert!

Quark Overnight Oats (EESP Friendly)

For this I used; 250g Quark 35g Oats 4 tbsp Skinny Syrups 100g Frozen Berries Mix the quark with the Skinny Syrups until thoroughly mixed in and smooth. Stir in the oats and mix well. Top with frozen fruit - frozen is better, as it add moisture to the oats. Leave overnight in the fridge. Enjoy!

BBQ Pulled Chicken (Slimming World Friendly)

For this I used: Icelands Pulled Chicken Stubbs BBQ sauce A choice cheese Cook the pulled chicken as pre instructions on packet. Top with BBQ sauce (2 tbsp for 1.5 syns). Place your choice of cheese on top and melt the cheese under the grill for a few minutes. Serve with carrot chips for speed.

How to make Slimming World Carrot Chips (EESP friendly)

For this I use a 300g bag of carrot batons. Pre heat the oven to 180° fan. Line a flat tray (must be flat not edged) with foil. Spray the foil lined tray with your choice of spray oil. Make sure it's suitable for roasting if you are using frylight, as some are only for frying. I use Frylight Olive Oil which has a roasting symbol on the bottle. Place the carrot chips on the tray and spray them with frylight. Put on the TOP shelf of the oven for 30 mins. Turn the chips over half way through roasting. Enjoy!

Chilli & garlic King Prawns with Corgetti

For this recipe you need; 1 large corgette (or pre packed corgetti) Pesto of your choice King Prawns Garlic Chilli Parmesan Spray a pan with your preferred choice of spray oil. Spiralize your corgette into the pan and add plenty of chilli and garlic (I use frozen chopped for ease). Put on a medium heat. Mean while place your king prawns in a smaller pan with chilli and garlic to your taste. Turn to the lowest heat. Allow the prawns to slowly turn pink, then turn over once. Keeping the heat low to stop the garlic burning. Be sure to not let them overcook. Once your corgetti is cooked (you can cook it as little or as much as you like depending on if you want a crunch or soft corgetti - 5 mins is enough for me). Add in 10g / 1.5 syns of Salca Chilli Pesto. Stir through. Serve the corgetti with the prawns on top and sprinkle with a tbsp of parmesan from your A choice. Enjoy!

Wrap Base Pizza

For this I used: BFree Wrap (B choice) A choice cheddar Bernard Matthews BBQ turkey BBQ sauce - 1.5 syns Place your wrap on to a baking tray. Put 2 measured tbsp of BBQ sauce in the centre of the wrap and use the back of your spoon to evenly spread the sauce over your wrap. Weigh and measure your cheddar *check your A allowance for brand you choose* and place on top of your pizza. Top the cheese with BBQ Turkey pieces. Place in the oven at 180° for 5 to 10 minutes. Keep a very close eye on it, as it cooks very quickly depending on your own oven. Serve with speedy butternut squash chips or a lovely salad, you can even top your pizza with red peppers and onions if you wish.

How to cook the perfect butternut squash chips

I regularly get asked how I make my butternut squash chips, so I thought I'd write a quick guide. I use a small size butternut squash as I find them easier to cut. Prep: Starting with the smaller end, cut your BNS into 1cm sliced discs. Set your discs aside in a bowl. When you reach the larger end you'll come across the seeds. Stop there. Stand the end upright and slice it in half length ways. Using a spoon scoop out the seeds. Slice each half again so you have quarters. Now your BNS is in pieces it's time to make the chips. Slice each disc and chunk into 1cm wide chips. Leaving all the skin on. Make sure your chips are all even in size to ensure that cook evenly. Cooking: Pre heat your oven at 180° Fan. Place on to a foil covered tray. Spray with your choice of spray oil. Fry Light Oilve Oil works best. Roast for 25 mins. Turn. Roast for a further 20 mins. Season with salt and serve!

The Slimming Mama on Holiday

So as you may know I blogged my food choices through my 7 days all inclusive at Sandos San Blas, Tenerife. On my holiday I gained 4lbs. I am proud to say it loud. I gained 4lbs! The reason I'm proud is because I worked hard on holiday for that gain. That might sound strange to say, but it's true! I owned that gain and I minimised it by being sensible. I'm a glass half full girl - I could have gained A LOT more than 4lbs if I hadn't carried on with my sensible choices. I chose Speed and Protein foods at every meal time, I chose diet non alcoholic drinks with the occasional tipple, I had a dessert everyday from the selection available, and lastly I estimated my healthy extras from the wide variety of breads and cheeses. One thing totally out of my control was the way the food was cooked. Every vegetable was cooked in oil, however I didn't let that prevent me making the right choices. Burger in a Bowl

This is a very simple dish. A go to meal for me if my husband is having a separate meal, as it's easy to make up in a single portion. For this recipe I used: 250g pack of 5% fat mince Bag of shredded lettuce Bag of sliced red onions 5 cherry tomatoes, halved Gherkin slices or jalapeños if you like spice Chopped white onion (I use frozen) Chopped garlic (1 clove) Salt and pepper to season In a nice wide bowl lay the shredded lettuce with sliced red onions on top. Place your tomatoes and gherkins / jalapeños around the edge. Place the onions and garlic in a pan sprayed with fry light (it works better to spray the pan first then add your ingredients before adding to the heat). Cook until the onions are soft, but not brown. Add the pack of mince and cook until it is fully cooked through, then season with salt and pepper to taste. Give it a stir before placing the mix in the centre of your serving bowl. This is totally syn free, but if you want to add a tablespoon of sauce then I use the SW Super Sauce Recipe here.

Slimming World Roasted Red Pepper Hummus

For this recipe I used; 1 large red pepper (or 2 small in my case) 400g can of chickpeas, drained 2 cloves of garlic Salt to taste Deseed and cut your red pepper into large chunks. Place on a roasting tray and roast at the top of a pre heated oven (180° fan) for 20 to 30 minutes, or until soft. Leave to cool. Meanwhile add your drained chickpeas and garlic to the food processor with 2 tbsp of water. Add in your cooled peppers. Mix to a smooth paste. Add a little more water if needed. Season to taste and serve with B choice Ryvita or B choice pitta. Don't forget to add in some speedy veggies to serve like some crunchy pepper slices or carrot sticks.Syn free and EESP. Enjoy!

Slimming World Scotch Eggs

For this recipe you need; 7 eggs (6 boiled and 1 for egg wash) B choice wholemeal rolls or Wholemeal Bread. 1 tbsp Garlic granules 1 tsp Mixed herbs 500g pack of 5% fat pork mince (Asda sell it). Firstly make your breadcrumbs from your wholemeal bread or rolls using a food processor. Place the breadcrumbs in a large flat bowl or on a plate and set aside for later. I used the Kingsmill crustless bread, but you can use any B choice bread you prefer. Meanwhile boil your 6 eggs for 6 minutes. Crack the 7th egg into a bowl to for your egg wash. Place your pork mince, garlic, herbs, salt and pepper into your mixer. Mix until it is smooth and no longer resembling minced pork. Tip - cover your surface with cling film to make cleaning up easier for this bit. Cut your homemade sausage meat into 6 evenly. Squash out the meat into a flat round and wrap around your boiled egg. Egg wash, then go straight into your breadcrumbs to coat. Place onto a baking tray and repeat until you have 6 beautiful scotch eggs. Give them a spray of fry light and bake for 30 to 40 mins in the oven.These are 1 B...

Avocado Chocolate Mousse

For this recipe I used: 100g of Avocado - 9.5 syns 10g Cocoa Powder (not hot chocolate) - 2 syns 4 tsp (18.4g) Sweet Freedom Syrup - 2.5 syns Flavoring / essence of your choice - orange, rum, vanilla... the possibilities are endless! I used orange essence as I'm addicted to chocolate orange at the moment! Total syns - 14 Using a blender mix your Avocado until it is very smooth. If you do not have a blender you can mash the avocado with a fork and then pass through a sieve to get any lumps out. Use the back of a spoon to push it all through. This gave mine a very fluffy texture. Once smooth add 10g of cocoa powder or cacao powder, but not hot chocolate. Mix well. Using a set of scales weigh out 18.4 g of Sweet Freedom syrup directly into your mixture and mix well. Taste to check sweetness, as you may be happy with slightly less syrup. You can also save syns by using Stevia if you wish, but I wouldn't use an artificial sweeter for this as it may leave a tangy taste and I prefer to keep it artificial free. I recently got the chance to try out Littles Coffee. I love it!  It has no sugar, 4 cals a cup, natural flavours, no syns! It's all infused in the UK and they are a family run company. The natural flavours really make this coffee stand out for me, as some who is increasingly looking to keep my diet as natural as possible.  Here I have Chocolate Caramel, Café Amaretto, Rich Hazelnut, Chocolate Orange, Swiss Chocolate, and French Vanilla.  This coffee available in Waitrose, Holland & Barratt, and also on their website www.wearelittles.com. "You can't eat that, you are on a diet"

The most common statement I hear. Eating in public can be a challenge for many people, even more so now I'm at target. When you are overweight you feel people are looking at what you are eating because you are large, you automatically assume they are judging you, but of course because you are overweight no one will say anything to you because it's not the done thing to do! Once you have lost your weight, what you eat is everyone's business. Once you have lost weight it's then OK for people to pass comment. "You can't eat that, you are on a diet" as you start to eat your dessert. That's it. Diet blown. 9 stone weight loss, and I've eaten a dessert, so all is lost. Does that sound logical? No. Why? Because it's NORMAL to eat dessert. Slim people eat dessert. How? Mangetout in Southend

I had dinner at Mangetout in Southend last night. It's the first time I've been, but I'd heard good things about them. They are quite hard to get booked into at short notice, but book in advance and you'll be fine. The easiest way to book is online as I'm yet to get through on the phone. Of course they do lots of off plan meals (burgers, ribs etc) but I chose on plan and I didn't feel deprived at all. I went for the Mangetout salad, with steak for my protein. I added on grilled halloumi to use as an A (it's sightly more than 1 A portion but I won't fuss about that in a restaurant). Aside from allowing for perhaps some oil on the grill, it's very healthy and very fuss free for eating on plan. There is nothing like being able to make a healthy choice without making a show of yourself!

I have started to top up my summer wardrobe. This is my 1st full Summer at my target weight, so I'm super excited about buying all my summer essentials. Caramel Pecan Cheesecake - 1 Syn

For this recipe you need: Jordans Caramel Pecan Skinny Syrups (from www.trkgcoffee.co.uk) 1 tub of Quark 35g of Grapenuts (B choice) Put the grapenuts in your bowl and pour over 4 tbsp of Skinny Syrup. Mix well and press down with a spoon to make your cheesecake base. Add 4 tbsp of syrup to your pot of quark and mix well. No need to sweetnen, the syrup is sweet enough. Top your cheesecake base with the quark mixture. Sprinkle with a few grapenuts, or even a pecan nut (don't forget to syn if you use nuts). Refrigerate overnight or for a few hours at least to allow the quark to firm up and the grapenuts to soak in all the syrup. Count 1 syn for 8 tbsp of syrup (0.5 syns per 4 tbsp). Enjoy!

What I'm giving up for Lent

So... I've thought long and hard about this. I'm not overly religious, but I was in Church last Sunday as they held a mass in memory of my mum. The vicar mentioned that Lent was coming up and it got me thinking. What can I live without? It can't be something easy, as it would be pointless. It's meant to be something you have on a regular basis so that you are making a genuine sacrifice. I'm going to attempt to give up chocolate for Lent. There. I said it. I'm highly likely to regret that tomorrow. However, it's not like I need it! I'm going to define what I mean by 'chocolate', as I want to make this clear. I will not eat chocolate in the form of bars, buttons, chocolate eggs. So basically no commercial choccy treats. I will, however, bake with Cacao powder in its raw form. It is the sugar and milk combined chocolate bar that I will be giving up. It will be a huge step for me as I do like my chocolate. Reducing my Sugar Intake

Over time I've gradually reduced my sugar intake without really realising I had done it. It happened totally naturally. I make all my food from scratch using only fresh ingredients. A lot of what I eat would be deemed as 'clean eating'. I didn't set out to eat clean, but those are the choices I naturally started to make and that's where I settled as a target member. I've battled with sugar cravings for a while. Probably since Christmas when generally most of us over do it on chocolate and festive treats. I always thought cravings came from Chocolate. That the Cacao itself was what I was addicted to, but actually it's not, it's the sugar. Sugar IS addictive. There are many articles to read online about the impact of sugar on our bodies. I've briefly done some research and I also enjoyed watching Sugar Free Farm. It has made me realise that, apart from my occasional chocolate bar, I'm well within the daily recommended intake of 30g of sugar a day. 2 Syn Apricot Syrup Sponge Pudding

This is another 'clean' recipe using fruit for B choice and to add natural sweetness. A slight variation on my brownie recipe I posted a few days back. For this I used: B choice Whitworths Dried Apricots*1 tsp vanilla essence  1 egg 2 tsp of Sweet Freedom light syrup (1 syn) *check your brand of Dried Apricots against the app or SW website to ensure you use the correct amount. In a blender place your apricots. Mix for around 1 to 2 minutes until you get a very smooth texture. Remove the apricots from the blender and place in a bowl. Add 2 tablespoons of water to make a smooth paste, then add a couple of drops of vanilla and a tsp of Sweet Freedom Syrup. Meanwhile separate an egg. Place the yolk into your apricots and set aside the whites. Stir the yolk into your apricot until well mixed. Whisk your egg white to soft peaks, then add the apricot into the whisked whites bit by bit, folding carefully so you don't stir the air out of your whites. 2 Syn Sugar Free Chocolate Brownie for One

This is a no sugar recipe, similar to my half syn brownies, but utilising your B choice Prunes to create the natural sweetness and a gooey brownie texture. Prunes are often used in sticky toffee puddings, so it makes total sense to use them in my brownies. The benefit of using this method is that you do not need to use artifical sweetner, making this recipe clean and also child friendly too. This is a brownie recipe for 1. To scale it up just add another 10g of cocoa per additional egg and likewise with the B choices. For this recipe I used; 75g Whitworths Prunes for B choice* 1 egg 10g Bournville Cocoa Powder (not hot chocolate) for 2 syns 1/2 tsp vanilla essence *Please check your brand of prunes against the app to ensure you use the correct amount, as the B choice weights varies wildly from brand to brand. I have no idea why, as I'd think I prune is a prune, but hey, that's the rules. Using a blender mix your prunes to a smooth paste and set aside. Coping with Heartbreak and Bereavement

Yesterday I said my final goodbye to my beautiful mummy. It's been 2 and a half weeks since we lost her on 19th December. I spent 3 long days at her side, staying a further day after she'd gone to just be with her to say goodbye. It's the hardest thing I've ever had to do in my life. My mum was my best friend, my go to for gossip and a girly chat. She was so loving and kind, she supported me through everything. She was a doting Grandma to my little boy. She was my creator. She brought me into the world and raised me to be the woman I am today. She was the centre of my universe until that time came that she had to give me that little nudge into independence. She gracefully accepted every step of the way as I began to need her in different ways, and she became Grandma when I had my little boy in 2014. Cooking Corgetti

Lately I've been eating a lot of Corgetti. With the right tools it's super easy to make and cook. You can buy it in some supermarkets ready made, but it's quite expensive. To make my Corgetti I use an Oxo Spiralizer which I bought at Waitrose for £14.99. I find that 2 large corgettes is enough for 1 serving. It shrinks down quite a lot when cooked. Spray a cold frying pan with Frylight Buttery (I prefer this for taste). Add the corgetti to the pan and spray on more Frylight. Using your hands toss and spray the corgetti until well coated. Turn the heat on to medium and regularly toss the corgetti. I find using a pair of tongs is best for this. Set a timer for 8 minutes. After 8 minutes your corgetti is cooked and ready to serve. Make sure you season well with salt and pepper. I serve with roast chicken, or with mixed beans stirred through, with seafood, and even with Spaghetti Bolognese. Enjoy!

Arla Protein Jelly Dessert

For this you need: 1 sachet of Hartleys Sugar Free Jelly (Strawberry or Raspberry) - 1.5 syns 1 Arla Protein - 1 syn Add 285ml of boiling water to your jelly sachet and stir well until all the crystals have dissolved. Leave to cool for 2 or 3 minutes. Meanwhile stir up your Arla Protein in the pot to loosen the yogurt a little. Add the yogurt to the jelly mix and stir until there are no lumps. Pour into your choices of mould or dish. You can make several desserts, mini sweets, or 1 larger dessert like I have. Refrigerate overnight to allow your jelly to set. Enjoy!

Christmas Plan

It's getting closer to Christmas and the party season is in full swing. I've had 2 this week alone, and did have another planned for Sunday, but it's now been cancelled. This leaves me with 2 clear weeks until Christmas Day. I want to make some smart choices on Christmas Day. I always have Bagels with Salmon and cream cheese for breakfast with a glass of champagne, so I'll be getting in the HEB Bagel Thins. With dinner I'll potentially consider roasting some BNS instead of potatoes (I won't miss them, but if you love pots don't skimp on them). Starters tend to be classic prawn cocktail at Christmas so I'll make sure I've got some light Thousand Island. Dessert for me will be what ever is on offer. I'm not one to turn down a dessert, in fact I'd rather make allowances elsewhere to accommodate dessert. Leading up to Christmas I've got lots to keep me occupied, fitness wise. I've got Zumba, HIIT workouts on DVD, and Zumba DVD. I'm going to fit in as many as possible and just keep active. Sticking to plan through thick and thin!

When I joined Slimming World my health was at serious risk. I was so unhappy and miserable, and I was a comfort eater. Not only have I lost my weight, but I've overcome my need to comfort eat by replacing the foods with other things or changing my perception of comfort food. Comfort eating is what caused me to get overweight in the first place, so it's very important to tackle your issues with food, as well as your lifestyle. Once you reach target, your journey isn't finished. In many ways it has just begun. I spent a year learning how to eat to lose weight, and now I need to learn how to maintain. Life still throws you the same hurdles as it did before, and you cannot simply revert to your old ways when times get tough, as impossible as that may be to understand from an outsiders point of view. As a target member and as an ex-overweight person, I have a plan to follow that is integrated into my life. It isn't an add on that I just throw away when times get tough. It's November, so that means we can talk Christmas, as it's officially next month! My social calendar is filling up for December and I need to plan wisely to ensure that I successfully food optimise around my festive plans. Here's how my diary currently looks, including all the things I will need to allow extra syns for. Currently I have something planned for every week in December, so it will take some careful planning in between events to maintain my weight. • 4th December - Zumba Christmas Party I'll be meeting team girls after the meal, so I won't need to use any syns. • 5th December - Slimming World Christmas Party - 3 course meal. Week 44 Weigh in Results (Week 12 at target)

I had a 1lb gain this week. I'm super happy with that, as it's as close to a maintain as I can get. Small fluctuations in weight are part of maintaining and are to be expected. Now I'm almost at my new target I feel much more accepting of minor fluctuations than I was at my old target. This just reaffirms that I'm right to be aiming for the reduced target. I have 4lbs to lose to get to my new target and my goal is to try to achieve it by 5th December (the Slimming World Christmas Party). Week 43 Weigh in Results (Week 11 at Target)

I lost 2lbs this week. 12 lbs below target! My total weight loss is 8 Stone 11 lbs - almost half my body weight! I find that very hard to digest, considering the most common thing I'm told is that there isn't any sign of me ever being that much larger. Most people now refer to me as tiny! Not words that I've heard often! I'm just a few lbs from where I think I want to set my new target, so as usual I'll see what the week brings. I'm not in weight loss mode or worrying about what I'll lose, if I lose I'm happy, but I'd equally be happy with whatever happens because enjoying life comes first; if I have an event or celebration then I'll flex my syns and go with it. Festive Slimming World Chocolate Brownies

I made these today using the recipe I previously posted for Chocolate Brownies. This batch are a little different to make them extra special for my groups food taster.... Ingredients : 6 eggs 60g Cocoa Powder (not hot chocolate) 1 tsp vanilla essence 70g granulated sweetner (I used stevia) Dr Oketor chocolate hearts Method: Separate the egg whites from the yolks and set aside. In bowl add the cocoa powder, sweetner, and vanilla to egg yolks and stir well. Add water to the mix if it is dry until you have a smooth mixture. In a separate bowl whisk the egg whites to soft peaks. Fold the egg whites into the chocolate mix carefully until fully combined. Pour into a silicone baking case (I used used a square tin for this batch) and bake for 15 minutes at 180°. Use a sharp knife or skewer to check the middle is cooked. If it comes out clean they are done. I used Bournville Cocoa Powder which is 12.5 syns for 60g / 249 calories (check the syns of your brand). My brownies for food taster are cut into 36, which makes the brownies less than half a syn. I added a Dr Oketor chocolate heart (4 cals / 0.25 syn each) to each one...

Ribena Winter Spice Poached Pears

2 Pears 4 cups water 1 cup Ribena Winter Spice Start off by pealing your 2 pears. Leave the stork on. Once pealed, weigh them so you can work out the syns. It is 2 syns per 100g of cooked pears. My pears were 100g each. Place your Ribena and water in a saucepan and pop your pears in. Turn the heat on high until the mix starts to simmer, then cover and leave for 25 mins. Serve warm with either Single Light Cream, fat free natural yogurt, a muller light, or just enjoy on their own. Don't forget to have a cup of the warming wintery drink, it would be rude not to! Week 42 Weigh in Results (Week 10 at Target)

I lost 2.5 lbs this week. Taking me to 10 lbs below my original target, and my total loss to 8 stone 9lbs. I'm happy with my loss this week, because I've eaten loads. I've always felt satisfied. I've had a lovely Date Night meal  (3 courses) with my husband and I've used all my syns everyday. I'm definitely very close to setting my new target. I'm taking each week as it comes. I'm not focused on any particular weight loss per week, I'm just happy to keep eating the same way and if I lose, gain, or maintain it doesn't matter. It's so nice to feel relaxed about this part of my journey! I'm so content in my eating plan. Here's to another positive week ahead!

No Chocolate Challenge

Today is day 8 of my #nochocolatechallenge. I started this challenge for a couple of reasons. I love chocolate. What's not to like? It's so yummy. It makes you feel good and it's all round one of the tastiest things ever! So... I stopped eating chocolate because I felt controlled by it. That's stupid, right? But it's true. I have issues with eating too much food. That's why I got overweight in the first place. One of the things that helped get me overweight was excessive eating of chocolate. I've always successfully controlled my intake throughout my whole Slimming World journey, but the problem is that once I eat it I want more, then I subsequently have to use my willpower to the max to stop myself eating more. Having willpower is great, but using it requires energy. Not of the physical kind, but of the mental kind. It's taxing when you are thinking about wanting bad things then putting yourself back in check. So I thought 'why give myself extra work?'. So I quit chocolate. Just like that! The Perfect Roasted Vegetables

Line a flat banking tray with foil. Use a flat tray, not a tray with sides, otherwise your veggies won't roast properly. Pre heat your oven at 200° fan (or 220° non fan). Spray the foil with fry light. Neatly place the veggies on. It makes turning easier when they are neatly places. Spray the veg with fry light. Put the vegetables on the TOP shelf of the oven. Close the door. Leave them alone. No shaking. No messing. Just leave them. Cooking times (based on my oven - so please use as a guide and adjust accordingly): Chantenay carrots : 30 mins - turn over - 30 mins Corgettes sliced : 15 mins - turn over - 15 mins Cauliflower : 20 mins (no turning required) Brussel Sprouts : 15 mins (no turning required) Mixed peppers, onions, corgettes : 30 mins (no turning required).

Oat Filled Baked Apples

Ingredients: 1 large apple or 2 small (2.5 to 5 syns for cooked apple depending on size) 35g porridge oats (B choice) 6 tsp Sweet Freedom Syrup (3 syns) Using a melon baller scoop out the centre of a large apple. Leaving around 1cm of apple at the bottom to retain your filling. My 2 apples weigh 150g so I'm counting 2.5 syns (1.5 syns per 100g). Mix your oats with sweet freedom syrup, nutmeg and cinnamon. Weigh your apple so you can calculate the syns (refer to the books or app to work out the syns). If your apple is too heavy then scoop out some more from the middle. Scoop enough of the centre out to fit in all your oats. Stuff the centre of the apple with your oats. Place in a glass dish and fill with around 1 cm of water. Bake at 200° covered in foil for 20 mins. Remove foil and bake for a further 20 to 30 minutes. Serve with a 12.5g spray of cream for 1.5 syns or 100ml of Light Single cream for 6 syns. Week 41 Weigh in Results (Week 9 at Target)

I had a tiny half a lb gain this week, putting me 7.5lbs below target. I had a few treats this week and allowed myself an off plan dessert, so it was nice to have balanced the treats well enough to get as close as possible to a maintain. I'm still thinking about my target reduction. I am very very close to making my choice, but I'm in no rush to set it in stone. One thing I am determined about is that going back up to my original target is not an option. I'm much happier at my current weight and feel so good about myself. This week I'm challenging myself to cut back on chocolate and to have other things for my syns.

Slimming World Spaghetti Bolognaise

I thought I'd re post this recipe, as it's a fave of ours in this house and Muscle Foods have an offer on their mince for my followers... 400g Extra Lean British Mince for 95p Code: SLIMMINGMINCE Expires: 19.10.15 You can place your order here. For this recipe I used Mushrooms 100g 1 Chopped onion Garlic powder Chilli powder 3 tbsp tomato puree Tin chopped tomatos 5% Fat Mince Worcester sauce 300ml Oxo Stock (2 cubes) In a pan fry off your onions in frylight. Add the mince and brown slightly, then add your mushrooms. After a few minutes add your tinned toms, stock, puree, and splash of Worcester sauce. Add garlic powder and pinch of chilli powder to taste. Simmer for 15 to 20 mins. Season well with salt and pepper. Serve with pasta, or for an eesp meal serve with corgetti or you can even use it to stuff a Butternut Squash. Enjoy!

Slimming World Fruit Crumble

I had a beautiful homemade crumble yesterday made by my husbands aunt. I'm really into comfort food at the moment and I'm constantly thinking of new ways to adapt my comfort eating ways to SW meals, so here's my take on a fruit crumble... 150g Raspberries (2 syns for cooked fruit / 3 syns for 250g) 35g Post Grape-nuts (HEB) 1 tablespoon Stevia or Sweetner 1 tablespoon of water   For this recipe I simply placed the raspberries in a small pie dish and sprinkled over the stevia. I then placed the fruit in the oven for 20 minutes at 200° fan. Check regularly to ensure your fruit isn't burning. I added a tbsp of water part way through cooking. After 20 minutes in the oven and when your fruit is nicely cooked down, add the grapenuts on top of your fruit and place back in the oven for a further 10 minutes. I also added another drop of water before putting the grapenuts on and gave the fruit a little shuffle around. My target dilemma...

I'm part way in to Week 8 at target, well sort of at target, I'm 8lbs below. I said I'd allow myself time to get used to being this weight to decide if I'm happy here or if I'd be happier lower or even higher. It's about getting used to where I am to see if I like what I see and feel like here. I know how I felt at the higher weight and to be honest I'm quite sure I don't want to go back up intentionally. A few lbs made a huge difference to how I felt about myself. The unknown is if I'll be happy any lower. I'm not an unhealthy BMI. I'm currently 23.5, so I have room for movement on my weight without being at risk. The problem is that everyone has an opinion on my new weight and none of them are supportive of any more losses. Chocolate Banana Muffins

2 Wheatabix (HEB) 50g mashed banana (2.5 syns) 1 egg 15g Prutella (39 calories / 2 syns) 50ml milk (1 syn or HEA) 1/2 tbsp Stevia or Sweetner of your choice. New Harvester Menu and Slimming World

I visited Harvester today to check out their new menu. The first and most obvious change to the menu (as a slimmer) is no nutritional information! I was looking at the menu totally lost because for me, the nutritional info is so valuable to know if you are health conscious. It can however be found on the website here. There are 2 new Skinny options on the menu. Geared towards low carb. They serve a Skinny Burger (no bun) and a Skinny Half chicken (no chips). They no longer have Mixed Vegetables as a side order. You just get to fill up on salad, which isn't an issue so much because I do like the salad bar, but in the winter I like warm vegetables with my meal. I weighed my wholemeal rolls while there today so I can confirm 2 is equal to 60g for your Healthy Extra B choice. Today I went for the Chicken & pepper Stack with Salad from the Salad bar. Week 40 Weigh in Results (Week 8 at Target)

Well as I expected I had a loss this week. Not a small one either. I lost 3.5lbs, taking me to 8lbs below my target. I followed the plan with intent to lose - so a loss was on the cards. I'm now at the point where I need to set my new target. Slimming World only allows a 7lbs reduction or more, so for now I'm going to float around here until I'm confident this is where I want to be. Once I'm happy I'll call target. It does mean I have to pay for a while, but I'd rather set a target I'm happy with than have to mess around changing it again . As a result of my loss I picked up my 8 1/2 stone award! Can't quite believe I had that much to lose, but I'm glad it's gone forever!

Comfort Eating and Being a Target Member

I'm a comfort eater. I always have been. I eat if I'm happy, I eat if I'm sad. I celebrate with food and I love people by offering food to them. It's probably totally the wrong way to be, but that's how I am. The last 2 weeks I've had to find a way to comfort eat while still food optimising. The want to comfort eat started with a visit to my home town to see my mum. I miss my family terribly since moving away in 2010. I spent the whole day with that bottomless pit feeling in my tummy. I wanted chocolate and I wanted lots of it. I wanted to open mum's fridge and raid all the naughty food that mums inevitably have in their fridge. I survived the whole day, dodging chocolate, successfully eating out on plan, and resisting a visit from the Ice Cream Van. Slimming World Speedy Curry Sauce

For this I used: Carrot and Coriander Soup vegetable mix or make your own with chopped onions and chopped carrots.Half a vegetable stock cube (you can leave this out if you wish - I wouldn't use it next time) Fat free natural yogurt 2 tbsp medium curry powder Add 1 litre of boiling water to your stock cube and mix well. Place your vegetables and stock into a large saucepan. Add 2 tbsp of medium curry powder to the pan and stir well. You can use mild or hot curry powder and add as little or as much as you want. I prefer to add 2 as a base and then adjust at the end if I feel it needs more. Simmer for 20 minutes on a medium heat. Once the vegetables are tender place the mixture into a food processor and blend to a smooth consistency. Add extra water if required at this stage to keep your sauce the right consistency. You don't want it to be too thick or too thin so add it carefully.  Tip - Don't stick it all in the blender at once or it might overflow and make a mess. Slimming World Pizza with Cauliflower Pizza Base

For this recipe I used: 400g Cauliflower Salt and pepper to season 2 eggs 1 tsp mixed Italian Herbs 35g Light Cheddar Cheese Syn free smoked ham Tomato puree Put your cauliflower in the food processor and blend until fine. Place into a microwavable bowl and cover with cling film. Microwave for 5 minutes. Once cooked season with salt, pepper, and herbs. Beat your eggs in a separate bowl and then mix with your cauliflower. It will be ideal to let your cauliflower cool slightly before adding your eggs so they don't scramble. Line your baking tray with baking paper and spray with fry light. Pour on your cauliflower mix. Spread with the back of a spoon to around 1cm thick and evenly distributed into your pizza shape. Note that your mix will be quite wet at this stage. Bake in the oven at 160° fan for 25 mins in the centre of the oven. After 25 mins flip your pizza base over carefully using a pallet knife and cook for a further 25 mins on the top shelf. Both sides should be golden brown. Week 39 Weigh in Results (Week 7 at Target)

So this week I had a loss of 2lbs taking me back out of target range at 4.5lbs below my target. I had 2 gains of 1.5lbs in the previous 2 weeks to bring me back into target, so I had worked hard this week to increase my intake to try to keep myself up where I needed to be. I had 3 meals out at restaurants and one of those was a Flexi Syn day where I didn't count syns at all (huge choccy dessert was devoured) so I thought I was safe. I was unwell with a cold mid way through the week, so I could possibly have lost weight through eating a little less on those 2 days I was ill, but I did food optimise and I did still eat 3 meals on those days plus syns. Going forward I'm yet again considering a target reduction. I will see what this week brings (I feel like I'm repeating myself). I might just go for it and reset my target 7lbs lower, meaning I'm only 2.5lbs from that new target.

Slimming World Eating at Nandos

Last night I went to Nandos with the girls. Their menu is very surprisingly Slimming World Friendly and Slimming World list syn values on their app for most menu items. I went for Butterfly Chicken Breast which is 2 breasts with the skin on. I chose Plain, but regardless of the marinade you choose it is still the same syns. I removed the skin, but I still counted the 3 syns it says on the Slimming World app. I'd say having researched the menu and syns that Butterfly Chicken is the best option to go for. I chose a salad and corn on the cob as my 2 sides. Counting the corn as syn free because I didn't put the butter on. The butter comes separate and sealed so you can make that choice, which is great. My friend chose the same as me, but she had the regular rice which is 2.5 syns. A good tip that was offered to me is to take your Healthy Extra B pitta with you and add it to your meal to save on syns. Slimming World Chocolate Cheesecake (2.5 syns)

For this recipe I used 1/2 tub quark 1 tsp / 4.6g Sweet Freedom Syrup (0.5 syns) 17g Grapenuts  (half B choice) Sweetner or Stevia 10g Bourneville Cocoa Powder (2 syns) Place your grapenuts into a zip lock food bag and crush with a rolling pin to make them finer. Weigh on to the grapenuts 4.6g of Sweet Freedom Syrup (weighing is less messy that spooning) and mix well. Using the end of your rolling pin flatten the grapenuts to create your cheesecake base. In a bowl mix together 10g of cocoa powder (not hot chocolate) with your quark. Sweeten to taste. I used around 2 tbsp to sweeten mine, but you could use less or more. Add and taste as you go until it's perfect. Place your cheesecake mix on top of your base, top with speedy berries and serve. Enjoy!

Avacado Chocolate Truffles

For this recipe I used: Half a bar of Aldi Stevia Sweetended Chocolate  (10 syns) 50g Avacado (4.5 syns) 2.5g Cocoa Powder (0.5 syns) To start, mash your avacado to a smooth consistency. In a bowl break up your chocolate into small squares. Melt in the microwave at short bursts, stirring half way through to stop it burning. Once melted, weigh in 50g of Avacado. Mix well and leave in the fridge to set. Once set use a melon baller to make small truffle shapes and roll in Cocoa Powder. Enjoy!

Muscle Foods Nut Butters

I received my first Muscle Foods order yesterday and couldn't wait to share these with you. Nut butters are so popular these days as they are very good for you, but often they are high in calories, so therefore high in syns. The Prutella has the taste of Nutella, but half the calories. Perfect if you want a Nutella fix, great for spreading, to add to porridge, or even added to quark. The Coconut Peanut is a Peanut Butter made with coconut oil. Slimming World Christmas Preparation

It's only September, but you can't fail to notice the increase of festive products starting to appear in the supermarket aisles. Only today I was faced with a mountain of tubs of Roses as I entered the store! It's led me to think about writing a survival guide for the festive season. As much for myself, as it is for my readers. I'm a target member, but I still need to pay attention to what I eat and what I do this year. It's my first Christmas on Slimming World and my first as a target member. I can't and won't revert to the way I've eaten in previous years. I'm going to begin to compile a list of my usual Christmas indulgences and work on some smart swaps to keep me on track and to save on syns. I may also considering a target reduction, or at least a weight loss in advance of the festive season to put me below target ready for any potential gain. Week 38 Weigh in Results (Week 6 at target)

I gained 1.5lbs this week taking me back into my target range, so I'm no longer having to pay to attend group. It was a planned gain, but it isn't fun having to gain because it feels like a negative thing, even though I needed it to be in target range. I need to work on accepting ups and downs each week as part of the natural process. Slimming World allow us 3lbs below and 3lbs above target as a Target Range. The reason for this range is because week by week fluctuations are totally normal. If I learn to accept that it's normal to fluctuate then I won't feel bad when the scales a little up or a little down. I am currently 2.5lbs below my target weight and I am planning to try and stay there this week. It's so hard getting the balance right to maintain, but I will get there eventually!

Roasted Vegetables Fritata

For this recipe I used: 2 eggs 100g sliced onions 100g sliced peppers Salt and pepper to season Roast your red onions and peppers in the oven at 200° fan for 15 minutes. Spray your pan with fry light and transfer your roasted veg to the pan. Whisk your 2 eggs and pour over the vegetables. Mix well. Your mix should be mostly vegetables with just the egg to bind it together. Place the pan on the heat for 10 minutes to cook the bottom, then under a medium grill for 10 minutes to cook the top. Season with salt and pepper then serve. Enjoy :)

Slimming World Homemade Granola Bar (2 syns plus 1 B choice)

For this I used: 30g of Special K Granola (B Choice or 5.5 syns) 3 tsp of Sweet Freedom Syrup (2 syns) Weigh out the correct amount of granola into a bowl. Using the end of a rolling pin crush the Granola clusters into smaller pieces, this will allow you to better mix and coat all the piece in syrup. Put the bowl onto scales, set to zero, and add the syrup directly on top of your granola by weighing 3 x 4.6g (a teaspoon). This is easier and less sticky than using an actual spoon. Stir the Granola until it is fully coated in syrup. Spray some baking paper with fry light and pour on your mix. Shape into a bar and bake in the oven for 8 minutes at 180° fan. Remove from the oven. At this stage it will be very sticky. Fold the baking paper around your bar to shape it while it's warm and cool quickly in the freezer. After 10 minutes in the freezer unwrap and enjoy with some Speedy fruit and some fat free yogurt if you fancy.

Slimming World Banana Oat Cookies

This recipe uses cooked banana which would need to be counted as syns. I've counted 4 syns for my banana (4 syns per 100g cooked banana). Normally I wouldn't use something like banana, but I wanted to post a recipe that would be suitable for other Slimming Mamas to bake and eat with the children that isn't full of artifical sweetner. This is a very simple recipe and will mean you can get involved in baking without the worry that you are making tempting synful bakes. It's healthy for the little ones too. For this recipe I used: 1 ripe banana 35g porridge oats (B choice) 14g Raisins (2 syns) 1 cap full of vanilla extract Mash your banana until it is well mashed and soft. Add in your porridge oats and mix well. Add any additional extras you want to add. You could use choc chips, nuts, dried fruit, the list is endless. I've chosen to add some raisins for 2 syns. To bake my Cookies I used silicone cup cake cases. For this I used: 1 tub of fat free onion and chive cottage cheese 5 eggs Smoked ham Cherry tomatoes Salt and pepper to season In a jug mix together the eggs, cottage cheese, salt and pepper. Whisk the egg whites until you have soft peaks. In a separate bowl add the cocoa powder, sweetner, and vanilla to egg yolks and stir well. Add water to the mix if it is dry until you have a smooth mixture. Fold in the egg whites carefully until fully mixed. Pour into a silicone baking case and bake for 25 minutes at 180°. I used Bournville Cocoa Powder which is 12.5 syns for 60g / 249 calories (check the syns of your brand). All other ingredients are syn free. I cut my cake into 8 so that makes it a little over 1.5 syns per slice. You could cut smaller slices for less syns. Enjoy!

1.5 Syn Slimming World Strawberry Cheesecake

For this one I used; 1 tub of Strawberry Arla Protein - 1 syn 17g of Grapenuts - half a B or 3 syns 1 tsp of Sweet Freedom Syrup - 0.5 syn Raspberries to top (or strawberries if you have them) Place your grapenuts in your serving dish. Put your serving dish on the scales and set to zero. Weigh out 4.6g of Sweet Freedom Syrup  (1 tsp). I find this the least messy way to get a tsp of syrup into the grapenuts without losing any in transfer from spoon to bowl. Mix the syrup with the Grapenuts. Mix your Arla protein to a smooth consistency and place on top of the grapenuts. Top with fruit. I think the strawberry Arla Protein is the best one to use for this. It has a nicer sweeter taste than the Raspberry and Blueberry, but of course you could use which ever one you prefer. It's important to leave your dessert to set for a couple of hours. The grapenuts will soften slightly / absorb the syrup and your Arla will set. Enjoy 😊

3 Syn Slimming World Raspberry and White Chocolate Cheesecake

For this I used: 17g Grapenuts (half a B choice or 3 syns) 1 tsp Sweet Freedom Syrup (1 syn) 125g (half tub) Quark White Chocolate Options (2 syns) Fresh Raspberries Weigh out your grapenuts and place in the bottom of your serving dish. Squeeze on 4.6g (1 tsp) of Sweet Freedom Syrup and mix well. In a separate bowl mix your quark with the hot chocolate sachet. Spoon the mix over the grapenuts. Top with fresh raspberries. Leave your cheesecake in the fridge to set for at least 1 hour until brgore you serve it. It gives the grape nuts enough time to soak up the syrup and allows the quark to set nicely. Enjoy :)

Week 37 Weigh in Results (Week 5 at Target)

I managed a small gain this week of 1.5lbs, taking me back up to 4lbs under target. It's not quite enough to stop me needing to pay next week though. I needed a 2.5lbs gain. I hated every minute of trying to gain - it's made me realise that gaining is not fun and not something I want to do intentionally. Even though I look the same, I feel fatter. It's all in the mind, of course. I think this week has taught me that perhaps being at a lower weight is a happier place for me. I'm going to see how I get on this week and then consider a target ammendment. I'm reluctant to set a new target right now until I find a comfortable place to be, because I don't want to put myself under pressure. It's confusing this maintaining malarkey!

4 Syn Slimming World Banoffee Pie

For this I used: 250g tub of Quark (1/2 the tub) Sweet Freedom Syrup (2 tsp for 1 syn) 17g Grapenuts (half B choice) 1 Options Hot Chocolate (2 syns) 12.5g spray of light spray cream (1 syn) 1 tsp sweetner 1 banana In a bowl mix the grapenuts with 2 tsp of Sweet Freedom syrup. Now mix half the tub of quark with your hot chocolate powder and 1 tsp of sweetner. Place mix into a piping bag and set aside. Place the sweetended grapenuts into the bottom of your serving dish, then pipe your quark on top. Don't worry if you don't have piping skills. Just pipe away until all the mix is used up. Now slice half a banana and place the slices on top of your dessert. To top with the correct amount of spray cream place your dessert on the scales and re set the weight to zero. Spray the cream over the top until the scales say 12.5g and you'll have the perfect amount. You can add a sprinkle of your fave chocolate or reserve a little of the hot chocolate to sprinkle on top... then serve! 4 syns! And wow it is amazing... Enjoy! ...

Woman of the Year District Finals

Well yesterday I attended the Woman of the Year District Finals. On arrival we were handed a little glass of bubbly. I had to go and be weighed and measured to check I was still in criteria. It was slightly worrying getting on the scales midway through the day, but I weighed at bang on target. We were separated into 2 groups and sat in the centre of the room. I had to do a speech about my journey in front of the judges and all my fellow finalists. I had decided that rather than scripting a speech, I'd bullet point what I wanted to discuss and speak from the heart about my journey. Lots of people did have written speeches, but those of us who didn't gave a much more natural and from the heart speech. I was in tears through my own and everyone else's stories. Week 36 Weigh in Results (Week 4 at Target)

I had yet another loss this week. 2lbs off. Taking me to Target minus 5.5lbs. I think the time has come to re assess my target and perhaps drop it. I have Woman of the Year this Sunday, so for now I'm focused on that and will make my choice on new target next week at group. I feel I'm so far below target now that to gain back what I need to would be too hard, or will involve over indulging, which I don't want to do. My total loss is now 8 stone 4.5 lbs.

Slimming World Pitta Pizzas

Ingredients: Weight Watchers Love Fibre Pitta (B choice) Asda reduced Fat Cheddar (35g for A choice) Tomato Puree Garlic Fry Light Mini Pepperami (30% less fat version) (2 syns each) Spray the pitta with garlic fry light and place under the grill for 2 mins. Remove from the grill and spread with tomato puree. Place back under the grill for a minute or so. Top with cheese and Pepperami and place back under the grill until the cheese has melted.

Week 35 Weigh in results (Week 3 at Target)

Well I had another small loss this week, just 1lb, but it's added up to 3.5lbs under target now. The target range for Slimming World is 3lbs above and 3lbs below target, so I've just gone out of the lower range. I need to gain back that half this week so I don't have to pay the following week, so I'm going to concentrate on making sure I get my extra Healthy Extras each day to boost my intake. I will get it right eventually, but for now I'm happy with where I am. It's not a bad problem to have.

I've been having Grape Nuts for my breakfast for the last 2 days. I've been looking to alternate my B choices since hitting target, so I'm pleased to have found these. They can be found in the cereal aisle of your supermarket. A B choice of Grape Nuts is 35g. I serve mine with Arla Protein and Speed fruit such as Raspberries or Strawberries.

Extra Easy SP Overnight Oats

For this I used... 35g Porridge Oats (B Choice) Half a tub of Arla Protein (0.5 syn) 100g raspberries I used a glass Kilner Jar which I bought from The Range. I layered the oats, yogurt, and berries. In all I had around 6 layers from the ingredients. I only used half a tub of Arla Protein, as I find it very filling. A whole tub would be too much for me. You can also add raisins. Raisins are 2 syns for a 14g box. I've added half a box of raisins at 1 syn to my oats I've made for tomorrow. You can be as inventive as you like with your ingredients.

Week 34 / Week 2 at Target Weigh in Results

This week I had a small loss of 1.5lbs. I don't fully understand how, as I have eaten a fair amount this last week. This has taken me to Target minus 2.5lbs. I can't go below Target minus 3lbs, or I'd have to become a paying member again. I am going to have a go trying to maintain again this week. I'm not going to try to gain, as I feel that goes against what my journey is about. If I can maintain at this lower weight it will leave me room for any gains caused by occasions that I cannot avoid. For now I am feeling very happy with where I am and I'm totally enjoying being a target member.

1st Week at Target and my 1st Zumba class!

I have just finished my first week at target. Weigh day is tomorrow at 9.30am. It was a confusing week to start with, as I struggled to switch my mind from weight loss mode to maintenance mode. I planned additional B choices into my meals, which initially was hard to get used to. Often I felt I wasn't hungry for the additional B choice. After day 3 I felt a lot more at ease and I have really enjoyed my first week maintaining. I started Zumba this week and I absolutely LOVED it. I felt great after the class! I realise that I am much fitter than I thought I was. 6 months ago I wouldn't have got through 10 minutes of Zumba, let alone 1 hour. I burned 821 calories (logged on my Polar T4 Watch)! I already have got my 2nd class planned for tomorrow night. I was also very pleased to be wearing size 8 to 10 gym clothes! I've never owned anything that small before! Week 32 Weigh in Results

Well today I hit Target! Ahhhhhhhhhh! 2.5 lbs loss taking me to Target minus 1lb! I also got my 8 stone award and was voted the groups Woman of the Year. I will be going to the District Finals on 13th September to represent my group. I am so overwhelmed and pleased to have been voted for! I had an amazing time at Group today and a few tears were shed during my speech. I'm prepared and excited to start the next stage of my journey. I've got all the tools and the knowledge from my Slim for Life book to help me along the way which will go hand in hand with the continued support and attendance at group. The group is an integral part of my weight loss journey and it will continue to be part of my journey going forward. I will sit down this evening with my book and read through. "Don't lose too much weight"

We've all heard those words. It's as if you get to a certain place in your weightloss journey and you can predict exactly when those words are going to tumble out of the mouth of the person you've just bumped into. I had it only this morning. "Don't lose anymore weight" she said. I am the healthiest I've ever been. At my highest weight I was classed as morbidly obese. All the people who are saying these words knew me at my largest. Not once did anyone offer me support or advice on my ever expanding waistline. Now of course, I'm not saying it's ok or appropriate to say to someone they've gained a few lbs, but by the same principle it shouldn't be OK for people to tell me I'm 'too skinny' or that I've gone 'too far'. Often the people saying these things have only seen me as a larger person, they never knew me in my younger slimmer years. To them I was a fat person. Slimming World Steak Bakes

For this recipe I used Kingsmill* Wholemeal Thins (syn free if used as a Healthy Extra B) and Asda Stewed Steak. If you have more time on your hands please see my beef stew recipe. You can easily use your slow cooker to make your own homemade stewed steak. This recipe is easily adaptable to all tastes and preferences, so if canned stewed steak isn't your thing simply think outside the box and make it your own. I must take a moment to warn you to check the app for which wholemeal thins are a B choice as there are other brands which are not a B choice. It must be the right one. OK so now back to the method.... Open out the thin and fill generously with stewed steak. Seal closed with egg wash and egg wash the top to get the golden colour once baked. I gave them a spray with fry light when I was spraying the tray. Bake at 180° (fan) for 20 minutes. Serve with speedy vegetables and perhaps syn some Ketchup. It would be rude to eat a steak bake without ketchup, in my opinion.

Summer Sale Shopping!

I haven't done a shopping post for a while, so here goes! Today I got myself a gorge necklace in the sale at Accessorize. £27 to £8.10. I love Accessorize! I needed to get some more moisturiser. I've been using Lancome Day and Night creams for a while, but they had ran out. I visited a fellow SW member at the No7 Counter at Boots and she helped me decide on something to use that suited my skin type. The service in boots was brilliant and actually she helped me choose a product that better suited my skin type and age. I had my bra size re measured. My back size has dropped but cup size is still a DD (thank the lord) as I've been losing boob like there is no tomorrow! The bra is Floozie by Frost French, which is a fave designer of mine, and it was only £12.95 in the sale. No doubt I'll have a lot more shopping posts in the coming weeks as I start the mammoth task  of buying a whole new wardrobe of clothes!

Week 30 Weigh in Results

3.5lbs off! 4.5lbs to target! Ahhhhhhhhhh!  How did this happen!? I was plodding along and expecting a 2lbs ish loss, so 3.5lbs is well above my expectations for the week, even though I'm on plan as usual I've expected a slow down. Obviously I'm super duper chuffed! I got Slimmer of the Month for the 7th Month in a row and my 7.5 stone award. Taking my total loss to 7 stone 8.5lbs.  So 4.5lbs to go; I've pledged 2lbs loss for next week . I have 2 weeks left on my NHS countdown so if I can do 2lbs and 2.5lbs I'll manage to get out of paying! Bring on the next week!

My Food Diary from Retro from Scratch

I got my beautiful food diary from Retro from Scratch on etsy. She also has an instagram page @retrofromscratch. She uses old books which she converts into new ones, with the added benefit of offering a variety of inserts to choose from. I currently have 2 books on the go; my food diary pictured below and also a shopping list book which I use everyday and features in my meal plan posts. The Food Diary has a recipe section at the back too. They are very well made and have some of the internal pages left in place, which I think is a lovely touch. Lush recently released a range of new products. I got a couple to try out. I have; Yuzu and Cocoa which has a coconutty / chocolatey smell. Strawberries & Cream Slimming World Style

This is more of a throw it together dessert than a recipe, but I'm calling it a recipe anyway. Ingredients: Asda Chosen by you Mini Meringue Shells Sainsburys Sugar Free Marshmallows Strawberries Arla Strawberry or Raspberry Protein Yogurt Asda Reduced Fat Spray Cream Place some strawberries into a bowl. 4 Meringues (60 cals / 3 syns). Half a tub of Arla Protein Yogurt (70 cals / 0.5 syns).  Place a bowl on a set of scales and set to 0. Squirt the cream until the scales show 12.5g weight (26 cals / 1.5 syns). Add 4 sugar free marshmallows (24 cals / 1 syn). Total Syns: 6 syns

Week 29 Weigh in Results & Food Taster at Group

I had a great time at group today. We had a food taster and people brought in so many lovely foods to try. I loved the Summer Berry Cream Pot, pictured in the centre of my plate, it was by far the tastiest of all the desserts I tried. The recipe can be found on page 132 of The Little Book of Summer. My Countdown to Target ~ Update

So as of Wednesday I am 10.5 lbs to target. At my usual progress rate I would acheive that sort of loss over 3 weeks, but I'm aware that being close to target can slow losses down so I have a realistic goal to acheive. I'm happy with a 2lbs loss per week, as long as I'm chipping away at that 10lbs, I'm happy. I use a couple of visual motivators to keep me going. Below is my updated sticker chart which I posted last week and my countdown jars. It's amazing to see all the stickers and buttons build up, and even more amazing to see how little is left. Realistically I hope to reach my target at a rate of 2lbs a week (more would be a bonus). If I acheive that then I hope to reach target around 19th August. Once I reach my target I will decide if I am happy at that weight or if I want to lose a further 7 lbs. I'm letting myself be led by how I feel and look, so I don't yet know what my target weight will feel / look like. I'm so glad I have reached a point...

My friend has introduced me to the most a-mazing coffee. I'm a coffee lover anyway, so I've made the switch to Organo because it has so many health benefits. Body Magic (Exercise)

The most common question I get asked is "do you do exercise?" so I thought I'd share with you all what I do. In the beginning I hardly moved at all. And that's the truth. I spent most of my days in the house, with my then 7 month old. I was having steady losses each week, but I knew I'd need to start moving more if I wanted to keep on losing. By the 3rd month into Slimming World I started feel better within myself and I found myself wanting to get out. I started off with a walk to the supermarket and back. I did this a few times a week, until I'd built up to doing it daily. I would get my days food while out for lunch and dinner, meaning I HAD to make that journey if I wanted to eat. The final countdown 'buzz'

So... incase I haven't mentioned it before... I have 15 lbs (at last weigh in 4 days ago) to target. I've had lots of advice from fellow members and SW'ers along my journey about getting to target, but I didn't actually know what this stage would be like for me. First of all - I feel incredibly proud to have got this far. At the start I didn't think I would, but part of me thinks subconsciously maybe I did know, but I didn't believe in myself. I took before photos, which I've never done previously when attempting to lose weight. Secondly I feel even more determined (if that's possible). I want to get there and I'm doing everything positive I can to get there. And lastly I feel a buzz. Like an excitement about being so close to where I want to be. It's spurring me on to continue to make the right choices. Along with my weight loss has come a huge amount of confidence, but at times the old feelings creep up on me and I find myself asking my husband ''do I look fat in this?" when really I don't, or at least he says I don't. What's inside my make-up bag

I was inspired to do this post by a blog I read today called Tiny Footsteps. I've been meaning to do something similar for a while around what my skincare routine is, so I figured now is a better time than any. My make up bag was part of the Benefit Kit which I've featured a couple of weeks ago on my blog. It's essentially a freebie and I love it. Inside my bag are several items. Not all of them are used everyday. I have 2 types of make up application; the everyday presentable mama look (ie. Not dragged through a bush backwards) and the going out - out look (which I'd like to get to do more often). So here goes... To start with I have: Benefit Speed Brow Benefit High Brow Benefit Instant Brow These 3 in combination are what I use to create the perfect brows. Subtle, but well shaped. I use YSL Touch Ã?clat concealer which is by far the best one I've found for concealing dark circles. It's great at light reflecting. Week 27 Weigh in Results

Weigh day today! 4lbs off! I was very surprised to have lost 4lbs, because I was expecting a slow down after losing 2lbs last week. I only have a stone to go for target now. My total loss is 6 stone 12 lbs. 2lbs needed for my 7 stone award which I'd love to aim for next Wednesday. I got Slimmer of the Week so I was the first person in my group to get a copy of the new Summer Journal. We aren't allowed to share what's inside, but it is a great motivational tool for getting through the summer and would be great for parents with kids off school for the holidays. In order to get your hands on one you just need to get Slimmer of the Week, Slimmer of the Month, or buy a countdown. Its a great time to commit to 6 or 12 weeks at Slimming World.

I've had to ditch my current size and move down to the next one! Putting all my jeans lined up really helps me visualise my weight loss journey from the start size to now. The Next Stage of The Journey

I'm getting close to my final target now, so it makes sense to talk about 'the next stage'. Once you get to target, it isn't a case of 'fair well Slimming World' and off you fly back to your old life. It's an on going journey. A new stage. All along I've known I've wanted to lose big, I never knew I'd get there (or anywhere close), but I knew if I wanted to get to target something had the change. Now I'm well into my journey I've got the next stage in mind. I know that the challenge continues and the journey carries on. I am excited to get that target award and to learn what I need to do to maintain. It's so important for me to know that there is a next stage and to know that the support continues. I fully intend to keep coming to my group and to be involved as much as I am now, because for me, the group is what has helped me the most. My latest Lush stash!

My husband got me some surprise Lush goodies today. I do love a surprise, but half the fun with Lush is going to the store. The smell. The goodies on display. Probably going to be the first one I try out! Butterball - another new one for me. I'm hoping it is like the description. Buttery and soft. Blackberry - leaves the water a lovely deep blue and smells gorge. The Comforter - one of my absolute faves from Lush, defo at the top of my list. Sakura - this one is so colourful and crackles while it melts, then it disappears to leave the water crystal clear. Another fave of mine. Dr Oetker Mug Cakes

Sometimes only cake will do. It's often difficult when buying a cake from a supermarket and having to portion it correctly, or even home baking and guessing the syns. These 1 cake packs are 79p. I got mine from the baking aisle of Asda. The chocolate chip is 291 calories which equates to 14.5 syns on the Slimming World snackulator and Lemon is 267 calories which is 13.5 syns on the Snackulator. They take 1 min 10 seconds to cook and all you need is 60ml of milk (which is already included in the calorie calculation on the packet).I served my husband the Lemon one tonight for dessert with 12g of light spray cream for 26 calories / 1.5 syns.

Slimming World Oat Pancakes using Sweet Freedom Syrup

This is the first time I've tried making these and they are amazing! I used: 35g porridge oats 2 eggs 1 tsp vanilla extract 3 tsp Sweet Freedom Syrup 2 tbsp fat free natural yogurt I mixed the eggs, syrup, yogurt, and vanilla together in a bowl. I then added the oats and mixed them in. To cook them I used a single egg pan which are available at most supermarkets. It allows you to create the perfect size pancake without the mix running all over a large pan. I sprayed the pan with frylight and poured in half the batter. All it takes it a minute or so on each side to get the perfect golden pancakes. To finish add 1 tsp more of Sweet Freedom syrup on top of the pancakes and enjoy. Count 2 syns for the syrup used. There is so much benefit to using the syrup instead of sweetner. It's a natural product and totally eliminates any artifical sweetner taste from your finished pancakes.

For Fathers Day tomorrow I am hosting a BBQ for my husband and father in law. Mint yogurt dip with Sweet Freedom Syrup

I've made my dip a little differently this time. Instead of using sweetner, I've opted for a natural sweetness from this Sweet Freedom Syrup. I simply mixed 1 teaspoon into my yogurt pot and added 2 tea spoons of mint concentrate. It's only 0.5 syns and is just as tasty as my usual mint yogurt without the artifical sweeter.

How much more weight do I want to lose?

I get asked this very often. It's a difficult question to answer because ultimately I am going to decide by how I feel and look, but I have set goals and a final target. I used the Slimming World book to set myself interm targets, all of which I've hit. My final target is on the horizon now.  I have set myself one more mini target in between my final target and where I am now. There is a very important reason behind the mini target that I shall explain more at a later date. Before I started Slimming World I set myself up a chart of how much I wanted to lose. I drew it all out neatly and popped it in a frame. Each time I lose a lb I stick on a shiney smiley sticker. It is in every sense a child like rewards system, but it helps me so much to visualise where I am, how far I've come, and how much further I have to go. I've marked my chart with gold stars to represent my next 2 goals. As you can see I'm not far off at all.

My husband came home with Hello Gorgeous for me this evening! The box is beautiful! Beautifully wrapped with a ribbon and gift tag with the contents listed, plus space to write who it's from. Slimming World Sweet Freedom Choc Shot Coconut Oat Cookies

I received the new Choc Shot flavour today... COCONUT! And oh my goodness it is amazing! It tastes like liquid Bounty bar. It's perfectly chocolatey and has just the right balance of sweetness with coconut. What's more it's only 0.5 syns per teaspoon, or 1.5 syns for 2 teaspoons. I couldn't wait to use it. I literally whipped up these healthy oat cookies in minutes. So easy to do and all you need are some basic store cupboard items and Choc Shot. Ingredients: 4 teaspoons of Choc Shot Coconut 35g porridge oats (Healthy Extra B) 1 egg Method: Whisk your egg until well beaten and add 4 teaspoons of choc shot. Stir well until all the Choc Shot is well mixed in and you have a dark chocolatey mixture. Stir the oats into the egg mixture to create your cookie batter. Place the oats mixture into 6 silicone cupcake cases (I find silocone cases are perfect for making cookies) and place in the oven for 12 minutes at 180°. The last time I was this weight!

I was speaking to my friend, who is also on her weight loss journey, about the last time I weighed the weight I am now. I worked it out to be around 7 or 8 years ago. In that time I have struggled and fluctuated from a size 12 to a size 22. Never did I think I'd see a number as low as this on the scales again. The next award I'm aiming for is 6 stone, which is 2lbs away at my last weigh in 2 days ago. I'm edging closer to my target and feeling great about myself, which is the ultimate goal. Chocolate Orange Slimming World Oat Cookies

Ingredients: 2 tablespoons of Canderel granulated sweetner 1 egg 2 tablespoons of Muller Light orange sprinkled with chocolate (syn free) 35g porridge oats (Healthy Extra B or 6 syns if not using as B choice) Method: Mix the porridge oats with the powdered sweetner and add the muller light. In a separate bowl mix your egg well, and then add to the oats mixture. Stir well. Pop a tablespoon of the mixture into the bottom of silicone cupcake cases to ensure a non stick even round bake. Bake in the oven for 10 to 15 mins (until golden brown) and serve with some mixed berries for speed.

Fajita in a Bowl

Ingredients: Chicken Mixed peppers Red onion Fajita spice mix Romaine lettuce Ols el Paso salsa mild or hot (0.5 syns for 2 tablespoons) 35g light cheese (Healthy Extra A) Method: Cut the peppers, onions, and chicken breasts into slices. Spray the pan with fry light (no heat) and add the ingredients. Turn the heat on to high and stir for a few minutes. Add 2 tablespoons of Fajita Spice mix (I use Bart Spices pictured below). Add more or less to taste, as this mix is very hot.  If the mix starts to dry out add a small amount of water to the pan and keep stirring until the chicken is cooked through and the vegetables are tender Line your bowl with lettuce leaves and put your fajita mix into the bowl. Top with 2 tablespoons of salsa (0.5 syns). Lastly put the cheese on top from your healthy extra A. Below is the same recipe but it sirloin steak sliced into pieces. Steak doesn't need as much cooking as chicken, so I cooked the vegetables first with half the spices and then added the steak and remainder of the spices for the final few minutes....

Slimming World Oat Cookies

Ingredients: 4 tbsp of sweetner 1 egg 35g porridge oats 1 teaspoon of vanilla extract Method: Mix the porridge oats with the sweetner in a medium sized mixing bowl. In a separate bowl mix the egg and then add to the oats. Stir together, then finally add the vanilla extract. Leave the mix to stand for 15 minutes. Place a heaped teaspoon of the mixture into the bottom of silicone cake cases and bake them in the oven for 15 minutes at 180° fan. By using silicone cake cases you get a nice even round cookie. I made 9 cookies with my mix. These are syn free if you use the oats as your Healthy Extra B. If you aren't using your Healthy Extra B then count 6 syns for the oats. My cookies are about 0.5 syns each (0.7 to be exact).

Bart Spices

I am loving Bart products at the moment. In particular the Tandoori Rub is used quite frequently in my meal plans at the moment. It is just a spice mix with no added oil or sugars so totally syn free because these are store cupboard staples. Today I discovered the Fajita Spices which come in a lovely metal tin. They are also just a mix of spices. I will be trying that out with some chicken and peppers, because I do love Chicken Fajitas. Waitrose are stocking the full Bart range and my Asda stocks a few products too. Check the ingredients to ensure the ones you choose is totally made of store cupboard staples before assuming it's free. Some do have oils and sugars in, so choose wisely.

Harvester Lunch

Today I went to Harvester for my little person's 1st Birthday. I ordered the Chargrilled Chicken Skewer, I asked for no chips and a grilled pepper. They were more than accommodating when I told them I didn't want the carbs. I got myself a large salad bowl from the Salad Bar, which I added to my plate when it came out. Don't be afraid to ask for an alternative if the item on the menu isn't quite what you want. Choose grilled meats. Avoid the coated or deep fried foods which have countless syns, check the menu for the calorie value of sauces to get an idea on the syns using an estimate or 20 cals = 1 syn, lastly fill up on the speed foods at the salad bar.If you are following Extra Easy you can choose the jacket potato or rice with your meal. Harvester is my fave place to go at the moment. Not only is it Slimming World friendly, but I can choose what salad I like and their chicken is amazing.

Syn free mint yogurt dip

For this dip I use: Fat free natural yogurt 175g tub 2 tablespoons of sweetner 1 1/2 tablespoons of Coleman's Garden Mint Concentrate (other brands of mint sauce may have syns so always check the app). Simply put the sweetner and mint into the dip and stir well, then serve. When removing the mint from the jar make sure you drain off the vinegar well before adding it to your yogurt. Great with tandoori spiced dishes and BBQ food.

Tandoori King Prawns

Ingredients: Raw King Prawns Tandoori spice mix (I use Bart Smokehouse) Cherry tomatoes Cook bags Method: Place the king prawns in the cook bag and add 10g of the tandoori spice. Shake well to coat the prawns, tie off the bag, and refrigerate for an hour or so. Preheat the oven to 180° (fan) and cook for 12 mins. Make sure the bag tie isn't too tight so any air can escape during cooking. Serve with cherry tomatoes and syn free mint yogurt dip (50g fat free natural yogurt, teaspoon of sweetner, and 1 tea spoon of garden mint concentrate).

Roasted Vegetable Fritata

For this recipe I use: 2 whole eggs 3 egg whites 125g frozen diced onions 125g frozen sliced peppers 1 chopped garlic clove Spray your pan with frylight and put in your onions, peppers, and garlic. Cook until all the peppers are soft and the onions cooked through, then set aside in a bowl to cool. Mean while crack the eggs into a bowl and mix well. Clean your pan and again spray with frylight. Pour in the egg mixture and then the vegetables, making sure they are evenly spread around the pan. On a medium heat cook the fritata for around 10 minutes until the base firms up. Pre heat your grill on medium and pop the pan under the grill for another 10 minutes until the top is cooked through and nicely browned. Season with salt and pepper, then serve.

It's that time of the week again...

Weigh day tomorrow. I've got another good week behind me, so I'm keen to step on them scales. This week my baby boy turns 1 year old. He is my motivation to lose weight and get healthy. When I had him I was determined to get back in shape by the time he turned 1, but I didn't manage to find my motivation as easy as I'd hoped. I finally joined Slimming World (and kept going back) when he was 7 months old, but I really thought my chance of getting in shape by his first birthday was slim (excuse the pun). I've worked super hard for every one of my losses and I have followed plan 100% for every day of the last 20 weeks. I didn't expect a quick fix or a speedy loss, but the combination of being a full time mum to a feisty little boy and the EESP plan has helped my losses stay consistent. I got this product today and I already love it. It comes in a cute little tin with a vintage design on the front. Perfect for popping into your handbag for a quick touch up. The first thing I noticed is the lovely scent, it had an almost herby natural remedy smell to it. It smells gorge. The tin has a sponge applicator inside to apply to cream. It has a solid consistency. You simply apply the cream using the sponge and instantly the skin appears smoother, more matt, and feels silky smooth to the touch. Remember why you started

I was tagged to take part in this on instagram and I thought it's probably time I wrote this down, because it's great to have a 'Why I started' reminder to look back on. I started Slimming World because I was unhappy with my post pregnancy weight, despite managing to lose a few lbs in pregancy, I was overweight before I even fell pregnant. I had my baby boy in May last year. When my husband went back to work and my mum went home I struggled to fend for myself. I could look after my baby and feed him, but I wasn't so good at feeding myself. I never seemed to find the time to prepare myself healthy meals. I started eating convenience foods or having lunch (usually pizza) deliveries. I tried to join SW around 4 times in 7 months and I never returned to see the second week. Week 19 results and ramblings!

What a week! Well I'll start with my weigh in this morning, after all that's what this week has been working towards. I lost 3lbs this week, putting me at a loss of 4 stone 11.5 lbs. 2.5 lbs away from my 5 stone award. I'm going for that this week! This week in group it was food taster week. I decided to go for one of my fave and most simple dishes, Crustless Quiche. The recipe is on the Slimming World Website, but I have adapted it slightly. I used a tub of fat free onion and chive cottage cheese, 5 small eggs, and smoked ham. Mix all together and pop in the dish. Top with cherry toms and oven cook for 35 mins. Everyone remarked how tasty it was and of course it is SYN FREE.   Last week in group my consultant started a competition. All we need to do is complete one (or more) of these swimsuit countdowns to be entered into a prize draw. I love a visual countdown, it really helps me focus, so this is right up my street. Party Dress Shopping

Next week my son turns 1 year old. My goal was always to be a healthy mummy. I wanted to be back in shape by the time he turns 1, but never did I think I'd be lighter than my pre pregnancy weight. In particular I wanted to be happy with the way I look in his 1st birthday photos. I've been unhappy at several of his milestone photoshoots, despite promising myself I'd get in shape in time. We'll this time I CAN say I did what I had been trying to do for 7 months prior to joining SW on 1st Jan. I went out this week to search for the outfit I will wear to the party and I came away with these 2 beautiful dresses in 4 dress sizes smaller than my start size. Both dresses are from Dorothy Perkins. My accessories are from New Look.

Mayflower Curry in the Slow Cooker

2 sliced white onions 2 chopped green peppers 4 chicken breasts 85g Mayflower Curry powder 340ml water In the slow cooker bowl add the curry powder and 340ml water. Whisk until mixed. Add whole chicken breasts and onions. Cook on LOW for 8 hours (or until dinner time). 1 hour before serving oven roast the green peppers for 10 minutes at 180° (fan) then add to curry. Split into 3 portions for 4 syns each, or 2 portions for 6 syns each.

Slimming World Tandoori Spiced Lamb with a syn free mint yogurt dip

For this recipe I used: Tandoori Spice Mix (any brand) A cook bag or skewers if you prefer 100g fat free yogurt 1 lemon 1 teaspoon sweetner Sugar free mint concentrate (containing just mint and vinegar) 2 lamb chops 1 red onion Trim all visible fat from the lamb and dice into roughly 2 cm cubes. Place all the diced lamb into a cook bag. Sprinkle over the tandoori marinade. I used 10g of marinade for 2 lamb chops. Shake until all your lamb is coated and place in the fridge for 2 to 3 hours. Chop 2 red onions into quarters, and place on a baking tray sprayed with frylight. Bake for 15 mins at 180°. After 15 mins add your lamb to the oven for a further 12 minutes. Meanwhile weigh out 100g of fat free yogurt. Add 1 teaspoon of mint sauce, be sure to drain off the vinegar from the spoon before adding to your yogurt. Add around a teaspoon of sweetner to the dip. You may wish to add sweetner a little at a time, tasting as you go to get the right flavour. About a teaspoon was perfect for me. Once cooked serve with a lemon wedge and dip on the side. Slimming World Thai Fish Cakes

Ingredients: 500g cod loin 200g raw king prawns 1 small egg 2 chilli 4 spring onions 1 stalk of lemongrass 1/2 red pepper 2 cloves garlic Small handful of coriander Makes 20 to 24 fish cakes. Syn free. Suitable for EESP. Method: Add all the ingredients to a food processor and blend until you have a thick paste. Transfer to a bowl and refrigerate for 2 hours, or overnight if possible to firm up. Use a tablespoon to measure out a portion of mix and shape into approx 3 cm fish cakes in the palm of your hand. Place on a baking tray sprayed with frylight. Cook in the oven for 15 mins or until cooked through and golden brown. Serve with a side salad and sweet chilli sauce - 1.5 syns per tablespoon.

Week 14

This week has been a challenge for some. Easter double bank holidays, nice weather, teamed with kids of school has sent some off track. I've had a personal challenge this weekend. Good Friday was my birthday, and on Saturday my husband arranged a surprise Afternoon Tea Party with all.our good friends and family. My husband went to a great effort to make sure I wasn't tempted to fall off the wagon by pre organising the chef to cook me a special meal of my request. I had scallops for my starter, with a balsamic glaze. For my main I had a steak with king prawns and a salad. The chef didn't use any oil for my food so it was totally syn free. I had a cake which I divided between all 16 of us and I enjoyed a trim little piece of cake which I'm fairly sure was within my 15 syns. Week 13

A brilliant week. I stayed below 7 syns on most days this week, apart from weigh day when I had 8 syns for a Chinese meal. I discovered these mini Green & Black's bars which are 15g of solid chocolate for 4 syns (each bar is slightly different on the syns value, but all between 4 and 5 syns). They are such a great use of syns and a substantial chocolate fix. I got mine from Waitrose on offer for £4.17. I tested out a new Aunt Bessies Product I spotted while shopping last week. Swede and carrot mash which you either microwave or heat in a pan. For quickness it is brilliant. It is only 1/2 syn per 100g, which is well worth using to save the hassle. It went perfectly with my Aunt Bessie Home Bake Yorkshires and Beef Stew. Perfect comfort food for cold days! I went out for the day on Tuesday to the Local Zoo. Week 12 Weigh Day!

I weighed in this morning and I lost 3lbs. I picked up my 3 stone award, taking my total weight loss to 3 stone 0.5 lbs. I also got Slimmer of The Month for the 3rd consecutive month with a 12.5lbs loss this month. I picked up the new Magazine at group today which has some lovely recipes in, and some really great inspirational stories. There is also an interesting section about out relationship with ourselves and food. As someone who loves food, I found this a very valuable article to read.  As a treat my husband too me to Mr Pings, my fave Chinese restaurant. I chose my usual, beef in black bean sauce. I asked for extra peppers to boost the speed foods and as I'm still following EESP I didn't have any rice. Well worth the 8 syns. I discovered a new brand of lip balms called EOS, so my husband treated me to one. They quite pricy for a lip balm but so worth it. They are made of organic ingredients and smell lush! Week 12 so far...

What a fab week I've had so far. Firstly I set up my instagram account for my Slimming World. I'm on insta to my personal account, but I never really used it. I wasn't aware what a following there is for Slimming World on Insta. I'm so overwhelmed with the support, motivation and inspiration I've experienced in just a few days. If you haven't already, you can follow me. The link is at the top of my Blog Page. Secondly I've tried a few new things this week. I have been using Maggi So Juicy papers for steak and also Salmon. They are 1.5 syns per paper and sooo worth it. The steak is the best steak I've eaten by miles. I cannot believe hadn't tried it until now. I've seriously been missing out. The papers at 50p on offer in Asda at the mo. Tonight I also used one for my Salmon, which again was amazing!! Give them a go! Weigh day tomorrow!

This week has gone by v quickly. I seem to have blinked and suddenly it's Tuesday. I've had another good week on plan so I'm hoping for a good loss tomorrow. Even though I've been saintly, I still don't take it for granted that I will lose, so I do get nervous. I'm 5.5lbs away from my next award, so I won't be expecting any awards this week unless I manage SOW. I've tried 2 new things this week; quark and Corgettes. With the quark I sweetened it to make it like a cream. I have to say it was v nice. I'll add a drop of vanilla next time and try that out. Next week I want to try it with an Options hot chocolate. This evening I made courgette ribbons and fried them off in Frylight. I didn't enjoy them at all. Not as nice as i hoped they would be. I haven't done body magic this week (apart from the usual running around after a 10 month old). I've been on a couple of walks over the week. It's hard when I've got a baby to look after to get time, so walking is the best form of exercise...

Staying to group

Lots of people ask why I've been so successful on Slimming World. 'What do you eat?' is the most common question I get asked. For me, the eating is 50% of the battle. The support is the other 50%. I always stay to group without fail. I listen to everyone else's successes and failures, we celebrate and support together. I enjoy going to weigh in and then to chat with everyone afterwards about how well I've done. I get praise, congratulations, and encouragement to carry on. I know some people go it alone, but research suggests that a member who stays to group is more likely to be successful than those who weigh and go. Your £5 isn't for weighing in. It's for the support. Make the most of it, because it's yours for the taking. Give it a go!

How to boil an egg

Now forgive me. This could be a pointless post, but I'm sure people do still search for 'how to boil an egg' so I'm going to do a Delia Smith and tell you all how I do it. I've become somewhat of an expert on eggs since following Slimming World as they are part of my daily diet (great protein). Prior to this the timing always confused me and I'd always get it wrong. So... here goes! 1. Place the eggs in enough cold water to fully cover them. 2. Bring to the boil. 3. When water starts boiling set the timer for 6 minutes (for a small to medium egg) 4. After 6 minutes remove the pan from the heat. Tip away the hot water and replace with cold water to cool the eggs. 5. Crack the shells with a spoon by hitting the egg with the back of the spoon all over until all cracked. The shell will just slide off easily. 6. Serve

Slimming World Chicken Tikka Masala

I tried the Tikka Masala ready meal last night. It was delish! My husband even said it was the best curry he's had. I would definitely buy it again. I'm following EESP, so this meal wouldn't ordinarily be suitable, but on SP you are allowed to have an extra HEA or some free yogurt to boost your calcium. On that basis I feel happy to count the yogurt in the curry towards my extra calcium. I highly recommend giving this one a go. I served it with mixed speed vegetables. The dish is from The Range.

This is what I had to eat yesterday. We had a family get together where party food was involved, so I had lunch before we left so I could avoid the food. The only syns were for the mint marinade on my lamb which was around 2 syns and my dessert which was 5 syns. My HEB were 2 Ryvita and 1 Hifi light with breakfast.

NHS Slimming World Vouchers

I have been attending Slimming World for 10 weeks this week. Someone mentioned to me a couple of weeks back that the NHS offers free vouchers to those with a BMI over 30. I had also read a success story in the March / April issue of The Slimming World Magazine on page 15 where the lady mentioned she had also used the NHS vouchers. I was given a phone number to call to self refer to speak to someone. I booked a meeting at my local youth centre. When I met with the lady I was asked a few health and lifestyle questions; weight, height, eating habits, exercise levels etc. It took no more than 15 minutes. I was issued with a 12 week countdown for free. All I need to do is meet with her again at the end of the 12 weeks to see how I am getting on. At group they simply added the vouchers to my profile so I can carry on where I left off. I was able to keep my progress which was very important to me. 6 Syn Dessert

I bought myself this gorgeous dessert glass, although really it's a sort of wine goblet, but I thought it would make a lovely dessert dish. It is from Waitrose. LOVE the range of products there. For my 'dessert' I used raspberries, a Muller Light Chocolate Fix, and a teaspoon of Choc Shot. No cooking or making required. It is purely a presentation job. I layered raspberries, then Muller, then topped with a raspberry and drizzled a teaspoon of Sweet Freedom Choc Shot over the top. Nicely prepared food makes for a lovely eating experience. It really felt like a lovely treat and I will eat it this way again.

Week 10 so far!

I'm part way through week 10. Almost weight day! I feel like I've had a good week this week and I'm hoping for a good loss. I've done a couple of things differently this week. I switched to speed HEB's (the ones with the S symbol in the HEB section). I wanted to see if it made much different to me having the speed ones instead of a normal HEB. When following SP you get 2 HEB, which I love, and I had always had 2 Alpen Light and 3 Ryvita for lunch. Going for the speed option means I only get 1 Alpen Light and 2 Ryvita Dark Rye. This is my second week having only speed HEB, but last week was * week so although I lost 3lbs, I felt it could have masked any potential increase in my weight loss so i have carried it forward for a second week. If I do not see an increase I'll have back my extra Alpen and Ryvita because it is a little more restricted, not that I have found it very difficult. I love the SP plan. I have been on plan 100%. 2 dress sizes smaller

Today my husband treated me to a few things I wanted. I had previously refused his offer to buy me clothes, but I gave in today and let him buy these bits. I'm pleased to say the jacket is 2 dress sizes smaller. I fitted in the next size down, but it was slightly too tight so I went for the more comfortable fit so i can wear it now. It felt great to be treated to some nice things and it was a revelation for me to finally let myself be rewarded. I also got some new make up too :)

Tonight's EESP Dinner

Tonight we decoded to have Gammon. We had baked beans last night, which is my usual fave combo with gammon steaks. Instead, I did one of my speedy salads with 2 boiled eggs. I love salad at the moment. For now it's my go to speed foods. It really fills me up and makes my meals interesting. My husband loved it too! I think the salad trend will see me though to summer, as will my weight losses!

Dessert

I think it's important to have dessert. After all we are allowed a treat. Too often people say "oh I mustn't have dessert, I'm on a diet". Why not? I treat myself everyday, be it some chocolate, Yorkshire puddings, or a Chinese. As long as it's weighed and counted it's all there to be enjoyed. I wait until the evening to enjoy my treat. I often find that's when I want to have something sweet and I do feel that if I have my treat too early then later in the day I might want something and have no syns left to have it. Recently Muller released the Light Chocolate Fix. I was sceptical about how it would taste. I imagined a yogurt taste, almost sour perhaps. I was pleasantly surprised that it isn't yogurt tasting at all, it is in fact very chocolatey. I enjoyed it so much I now have a fridge full of each flavour. They are a tiny 5 syns each and so worth it. Now if they could just release a white chocolate version and I'll be in heaven 😊

9 Weeks in...

So I am coming to the end of Week 9. I weigh in tomorrow morning at 9.30am. I have had another good week. Stuck to plan 100% and I have enjoyed some great new meals this week.  I get asked very often how I've managed to lose over 2 stone in 8 weeks. The truth is there is no secret, there's no magic trick. It is simply following plan and your own metabolic rate that determines how much you lose.  I had been trying to get on plan since I had my baby in May 2014. It took me 7 months to get my mind in the right place, but when I finally did I got off to a storming start. I have worked incredibly hard for my losses and I haven't cheated once.  I'm focused on hitting my target and I will get there in 2015. I've had a couple of sarcastic comments about how quickly I've been loosing weight, sadly from a fellow slimming world member. I'm just keeping my head down and doing all I can to get where I want to be. Just smile and keep on keeping on.

Crustless quiche, blue cheese stuffed portobello mushroom, with baked beans

Tonight for dinner we had crustless quiche. I made it with: 5 medium eggs 1 tub of cottage cheese with onions and chive 4 bacon medallions Frozen onions 8 cherry tomatoes Simply mix all the ingredients together in a bowl, pour into a flan dish, top with cherry tomatoes and cook in the oven for 30 minutes at 180°. I served mine with a portobello mushroom. I stuffed my husbands mushroom with Laughing Cow Light Blue cheese (4 is HEA). Very quick. Very tasty. So simple.

Slimming World Meatballs in homemade tomato sauce

I tried the meatballs tonight and what can I say. I love them. I've heard mixed reviews, so I was worried I wouldn't like them. My husband loved them too. Here's the recipe for my sauce: 400g tin chopped tomatoes 2 garlic cloves 1 Chopped Onion 1/2 tsp of sweetner Dash Worcester sauce 250ml water 1 oxo cube Simmer for 15 mins and serve with meatballs, steamed spinach, and pasta if you are following EE.  I'm doing SP and my husband is doing EE so i served his with 100g pasta. Sprinkle with basil and enjoy!! Xx

Seafood

I ordered a couple of seafood dishes while out at The Shoeburyness Hotel yesterday.  The chef was very accommodating and cooked my food without oil. I had scallops with balsamic vinegar and king prawns with garlic. As always with this restaurant the food was amazing.

Surf & Turf

Today was our wedding anniversary so i wanted to do a tasty meal. I used: Pack of raw king prawns (P) Steak (P) Garlic infusion Frylight (Free) Coleslaw vegetables (S) Helmanns Lighter than Light Mayo (0.5 syns per tbsp) I sprayed the prawns with garlic Frylight. Put the prawns and steak under the grill.  Cook for 6 minutes each side for a medium steak. Mix the mayo with the coleslaw vegetables. Serve!

Onion & Chive Crustless Quiche EESP

Ingredients: Onion & Chive cottage cheese (P) 8 slices of smoked bacon (no fat) (P) 1 small onion (S) Cherry tomatoes (S) 6 eggs ( P ) Fry bacon and Onions together until cooked. Place these in your flan dish. Mix cottage cheese with eggs in a bowl. Pour the mixture into your flan dish and top with halved cherry tomatoes. Cook in the oven at 180° for 25 minutes. Serve with salad or veg for 50% speed foods. You do not need to add any salt to this recipe, because the bacon adds a salty taste to the meal.

Breakfast Cakes (EESP friendly)

Ingredients 2 small Wholemeal slices of bread (HEB) 2 Eggs Lean hand or Lean Bacon Cheese of your choice (cab be HEA or Synned) Fry light Salt and Pepper Using a rolling pin flatten the bread slices. Spray your baking tin with fry light and line 2 small sections with a slice of bread in each. Spray the bread with fry light and put in the oven at 180° for 6 minutes to lightly toast them. Remove from oven and fill the cases with your chosen ingredients. A couple of slices or ham or bacon, and a small slice of cheese if desired. Once filled crack an egg directly into the bread case. Place the egg cases into the oven for 20 minutes. Once removed season with salt and pepper and serve. If you wish to make these into a quiche then whisk your eggs prior to pouring into the cases and cook for the same amount of time. Enjoy ï??

EESP Crustless Quiche

This crustless quiche recipe is SP friendly and packed full of protein. I am using: Lean bacon Chopped Onion Fat free cottage cheese 4 to 5 eggs (depending on dish size) 70g of low fat chedder (HEA for 2 people) Cherry tomatoes Method: Fry off onions and bacon in fry light. Mix eggs and cottage cheese together. Add the onions and bacon to the quiche dish and pour over the egg mix. Sprinkle the chedder on top of the quiche mix. Add halved cherry tomatoes to the top of the quiche. Cook in the oven for 20 to 25 minutes at 180°. Depending on your dish size you may need to adjust the cooking time accordingly. The 178g Cadbury Caramel Easter Egg consists of a 100g chocolate egg and 2 39g Caramel Eggs. Slimming World Haribo Sweets

Below is the recipe for how to make sweets the Slimming World way: Ingredients: 2 sachets of jelly 2 sachets of gelatine 1 muller light Silicone molds (around 50) Method: Add 1 jelly sachet and 1 gelatine sachet to 140ml of boiling water. Mix until dissolved.  Fill up your molds half way with the mixture. Put your half filled molds in the fridge to set for 10 to 15 minutes.  Make up the same mixture again, but this time add your muller light to the mix and stir. Pour this mixture on top of your set jelly and return to the fridge. Once set your sweets are ready to be eaten. How to prepare a butternut squash to make chips (SP Friendly)

To prepare a butternut squash I first cut off each end. I then used a potato peeler to peal off the skin.  This is by far the easiest way to peel. Some recommend using a knife, but unless you have super chef knife skills it's near impossible. Once peeled slice the squash into 1 cm thick discs. Remove the seeds with a spoon and slice into chip sized chunks. Spray with fry light, season with salt, and cook in the oven for 35 minutes.

I have had a zip up pouch made by a work at home mum to hold my slimming world book and card. I had in my mind what I wanted, but I couldn't find anything that met the requirements in the shops. I came across Homemade by me with Love on facebook and sent her my requirements. Within a day or two she sent me the fabric choices and made my requested bag, complete with card holder in the lining. It is much nicer than my Slimming World plastic folder which after just 5 weeks of ownership is already tattered.

I decided I would write this review of both Weight Management Plans, because I have followed both and been successful at both. Firstly, I'll explain why I did Cambridge Diet in 2011. I had recently moved out of my parents house into my own property. Cooking and eating for one was hard. Often it would be easier to get a take away or an unhealthy ready meal. I had heard someone I knew was successful on it so I thought I'd try it. I went into it with a huge amount of motivation, which meant I stuck to the 3 shakes a day very easily. I was having 454 calories a day; a shake for breakfast, lunch, and dinner. If I had company I'd eat some chicken so i didnt appear to be unsociable. In 12 weeks I had lost just short of 3 stone. Italian Pizza Chicken

I saw this recipe cooked by Gino D'acampo on This Morning. I realised it was easily adaptable to Slimmimg World so i decided to cook it so I could use up my chicken I had in the fridge. Ingredients: 2 400g Tins of Chopped Tomatoes. 3 Sliced Garlic Cloves 1 teaspoon oregano 70g Mozzarella per person* 2 chicken breasts Italian salad bag Put tomatoes, garlic and oregano in the slow cooker. Trim any excess fat from the chicken breasts and pop in the slow cooker with the sauce. Make sure they are fully submerged. Once cooked, plate up the chicken with sauce. Add the sliced mozzarella to the top of the chicken breast. Pop the plate under the grill for a few minutes or until the cheese melts. Be careful the plate will get hot. Add some salad and serve. *70g Mozzarella is a HEA for the Asda Chosen by You Lighter Mozzarella. Always check the brand against your book or app to ensure you use the right amount. Each brand varies in weight allowance for  a HEA. I chose this brand because the portion allowed is more generous than some others.

I ordered a beautiful steak and prawn salad for lunch. I asked my husband to ask for no oil and no dressings. The waitress came over to kindly inform me they coat their steaks in oil prior to cooking and that all steaks were pre oiled. This came as a surprise to me. I had to ask them to dig a steak out from their fridge that wasn't oiled. They kindly did this for me, but it serves as a warning not to take for granted that all restaurants use no oil. Always check and always ask.

Slow Cooker Beef Stew (EESP and EE friendly)

Ingredients: Carrot Swede Turnip Silverskin onions Celery 700g Lean diced beef 600ml water 3 Oxo cubes I used a bag of frozen mixed casserole vegetables. It was 98p for a bag in Asda. I trimmed any excess fat from the meat before placing it in the slow cooker. I moved all the meat to one side and placed an equal amount of vegetables in the other side. That way I can see by eye that I have an equal amount of vegetables and meat. I poured the stock on top of the ingredients and then mixed it all together before placing on low. I switched it on at 9am and will leave it cooking on slow until dinner time. I prepped the slow cooker the night before and popped it in the fridge ready to add the stock the next day. A perfect meal if you are a busy mum like me. If you use Oxo cubes (a store cupboard staple) and Speed vegetables with lean meat then this is a syn free meal. Suitable for EE and EESP. For an EE meal you could add some free vegetables and some potatoes too. For EESP this is Speed foods and protein packed. ...

The New Slimming World EESP Plan

Well it's that time of the year again. Slimming World Release their new pack and with it an updated plan. The new plan is streamlined. No more Red or Green Days. Instead we have EESP and EE. EE is as it used to be, although you'll find some syn values have increased and some items are no longer free than once were. EESP is entirely new. The basics of EESP are that you must only have Speed Foods (which replace what used to be Superfree) and you can only have Protein Foods. Your plate must consist of 50/50 S and P foods. If you have a look at my EESP food diary you'll see what I've been eating on EESP. When following EESP you can use your syns as usual, but you cannot have free foods, unless it has the S or P symbol in the book. It took a few days of getting used to, but now I'm used to the plan I really enjoy it. It has been suggested that following SP will boost your weight loss. I have followed SP for 10 weeks now (updated 11th March 2015) and I have lost 2 stone 8.5lbs. I have had a speedy weight loss....

Chips and Baked Beans

Home made Potato Wedges. Made using the recipe for my cajun potato wedges, but I left the skin on and I used Marabel Potatoes. Marabel Potatoes are very buttery in taste naturally. I cut the potatoes into wedges. I popped them in to boil for 25 minutes. Do not worry about over cooking. The skin holds the wedges together. Once boiled drain off water and place the wedges in an even layer on a banking tray. Spray with fry light and cook for 25 minutes in the oven. A tip for removing the wedges from the drainer. I use a plastic set of tongs to pick up and place the wedges on the baking tray. This way they are kept intact. I also place my wedges on grease proof paper sprayed with fry light. This has helped me get nice crispy wedges. This meal is free on EE.

I was pleasantly surprised to find that the portion is only 400g (which I find is more than enough). The Slimming World book states that it is 8 syns for an average 550g portion. Chicken Kebabs with Nandos Flavoring

For this recipe I use: Chicken or Turkey - a 340g pack as shown below will make 4 skewers. Nandos Rub (various varieties available) Salad Kebab skewers Serves: 2 Syns: 3.5 (half that if you share the portion) Method: Dice chicken and add to a mixing bowl. Pour over Nandos Rub and mix well. Leave to marinade overnight for extra flavour or you can use immediately. Grill for 25 to 30 mins depending on the size of your diced chicken. Always check your chicken is cooked throughout before serving. Once cooked serve with your choice of salad. To make a refreshing dip use some fat free natural yogurt mixed with lemon juice to taste. This is particularly nice when you use one of the spicier marinades. I used diced turkey for this recipe because it was better value to buy pre diced than the chicken breast. Nandos Lemon & Herb Chicken Kebabs

Ingredients: Boneless chicken with all fat and skin removed. Nandos Lemon & Herb Rub. Cherry Tomatoes Cucumber (or what ever salad / vegetables you prefer). Cut chicken into bitesized cubes / slices and put into a bowl. Add Nandos Rub to the bowl and mix to coat all the chicken. Put the chicken on kebab skewers (I got mine in Asda - 6 for £1). Place under the grill. No need to add oil or fry light. A small amount if burning will occur on the edges but it adds to the kebab taste. Serve with salad or veg of your choice. 3.5 syns for the Nandos Rub which is a 75g packet. You could get away with using less if you wish. You can buy various Nandos Rubs for chicken. Simple. Quick. Tasty.

There is a healthy section of the menu which has dishes under 500 calories, but I opted for the 14oz Rump steak. I asked them to swap chips for salad and checked their cooking methods with the bartender. I was assured they do not use any oil and steaks are cooked directly on the grill. Cajun Spice Potato Wedges

For this recipe I peeled 4 potatoes and cut into wedges. You don't have to peel the potatoes if you would prefer to keep the skin on, some people might say it tastes better. I wasn't sure how to cut the perfect wedges, so I searched on google and found a great little video from Gordon Ramsey to show me how. If you search for it on google it's the top result. Once the wedges are cut you need to put them in a large pan of seasoned boiling water for 10 minutes. It's advisable to keep an eye on the wedges while they boil, as they literally need cooking until you can put a knife through. Cook for too long and you'll end up with mash potato! Meanwhile spray a baking tray with fry light to avoid sticking. Once boiled drain and shake the colander to fluff up the edges of your wedges. Place in an even layer in tray and sprinkle with Cajun spice to taste (3-4 teaspoons was perfect for me). There are the usual body magic books and inspiration books, just with a revamp. I'll still continue to use my old book with records inside and my awards stuck on, as will many other people I'd imagine! Tandoori Chicken & Boiled Rice

Chicken legs (all fat removed) 200g fat free natural yogurt 6 tbsp tomato puree 4 tbsp tandoori curry powder 1 tsp hot chilli powder 2 tsp sea salt 3 tbsp lemon juice lime wedges, to serve miix together the yogurt, tomato puree, curry powder, chilli powder, 2 tsp sea salt and lemon juice, then rub into the chicken pieces. cover and leave to marinate in the fridge for 4 - 5 hours, or overnight if time permits. Cut slices into chicken to allow marinade to enter chicken. Oven cook 40 minutes

King Prawn Lunch

Here is a lunch I wanted to re create, as my gym does the most fantastic King Prawn Salad. I always, until now, over cooked my prawns out of fear of not cooking them enough. So.... I heated my pan to a medium heat, then added a test prawn to the pan to time when it was perfectly cooked (crazy, I know). I discovered that around 2 minutes is enough to get the result I wanted. I sprayed my prawns with fry light, not the pan, as I find it disappears as soon as I spray the pan. I cooked the prawns 1 minute on one side, then turned them (which took a little while) for another minute on the other side. I left them cooking for another 30 seconds to allow for the time it took to turn them all. The salad.... Using my Twist & Chop I chopped separately 1/2 red onion, 4 medium tomatoes (juicy bit removed), and about 6cm cucumber. Mix it all together and hey presto a refreshing salad! You can add syns if you wish by putting some Balsamic Glaze over the dish, as shown below the one i use is from Asda....

My Special Spaghetti Bolognese (hubby's favourite)

I follow the SW recipe from their website, however I always add some additional syn free ingredients to the recipe to make it more tasty. I add some hot chilli powder, some garlic powder and some tomato purée. Here is the basic recipe from SW website: Ingredients Fry Light, for spraying 2 shallots, finely chopped 2 garlic cloves, crushed 340g/12oz extra lean minced beef 227g/8oz button mushrooms, thinly sliced 1 x 397g/14oz can chopped tomatoes 284ml/10fl oz beef stock 1 level tbsp Worcestershire sauce salt and freshly ground black pepper 283g/10oz spaghetti, dried Method Spray a pan with Fry Light and cook the shallots and garlic for 2â??3 minutes until just softened. Stir in the mince and cook for 2â??3 minutes until browned. Stir in the mushrooms and cook for 1 minute. Add the chopped tomatoes, stock and Worcestershire sauce. Season lightly and bring to the boil. Reduce the heat and simmer for about 15 minutes until reduced and thickened. Check the seasoning. Meanwhile, cook the spaghetti in a large pan of salted boiling water, as per the packet instructions, until just tender. Drain and divide between 4 serving plates. I chose Smoked Salmon and Scrambled Eggs at the gym this morning. I asked for it to be made with no butter, and just a touch of milk. It was yummy and a great alternative to a fry up (as can be seen in background being scoffed by hubby).

Tandoori Chicken

I made this tandoori chicken using fat free natural yogurt, tandoori spice mix, fresh squeezed lime juice, chilli powder and tomato purée. Mix all the ingredients together and then marinate some chicken legs with the skin removed. Lovely with a mixed salad and some yogurt for dipping - just add some lemon juice to the fat free yogurt for a refreshing dip.
