700g Lean diced beef
3 Oxo cubes
I used a bag of frozen mixed casserole vegetables. It was 98p for a bag in Asda.
I trimmed any excess fat from the meat before placing it in the slow cooker. I moved all the meat to one side and placed an equal amount of vegetables in the other side. That way I can see by eye that I have an equal amount of vegetables and meat.
I poured the stock on top of the ingredients and then mixed it all together before placing on low.
I switched it on at 9am and will leave it cooking on slow until dinner time.
I prepped the slow cooker the night before and popped it in the fridge ready to add the stock the next day.
A perfect meal if you are a busy mum like me.
If you use Oxo cubes (a store cupboard staple) and Speed vegetables with lean meat then this is a syn free meal. Suitable for EE and EESP. For an EE meal you could add some free vegetables and some potatoes too. For EESP this is Speed foods and protein packed.
