Breakfast Cakes (EESP friendly)


2 small Wholemeal slices of bread (HEB)
2 Eggs
Lean hand or Lean Bacon
Cheese of your choice (cab be HEA or Synned)
Fry light
Salt and Pepper

Using a rolling pin flatten the bread slices. Spray your baking tin with fry light and line 2 small sections with a slice of bread in each. Spray the bread with fry light and put in the oven at 180° for 6 minutes to lightly toast them.

Remove from oven and fill the cases with your chosen ingredients. A couple of slices or ham or bacon, and a small slice of cheese if desired.

Once filled crack an egg directly into the bread case.

Place the egg cases into the oven for 20 minutes.

Once removed season with salt and pepper and serve.

If you wish to make these into a quiche then whisk your eggs prior to pouring into the cases and cook for the same amount of time.
