To prepare a butternut squash I first cut off each end. I then used a potato peeler to peal off the skin.
This is by far the easiest way to peel. Some recommend using a knife, but unless you have super chef knife skills it's near impossible.
Once peeled slice the squash into 1 cm thick discs. Remove the seeds with a spoon and slice into chip sized chunks.
Spray with fry light, season with salt, and cook in the oven for 35 minutes.
