Fajita in a Bowl

Ingredients:

Chicken
Mixed peppers
Red onion
Fajita spice mix
Romaine lettuce
Ols el Paso salsa mild or hot (0.5 syns for 2 tablespoons)
35g light cheese (Healthy Extra A)

Method:

Cut the peppers, onions, and chicken breasts into slices. Spray the pan with fry light (no heat) and add the ingredients.

Turn the heat on to high and stir for a few minutes. Add 2 tablespoons of Fajita Spice mix (I use Bart Spices pictured below). Add more or less to taste, as this mix is very hot. 

If the mix starts to dry out add a small amount of water to the pan and keep stirring until the chicken is cooked through and the vegetables are tender

Line your bowl with lettuce leaves and put your fajita mix into the bowl. Top with 2 tablespoons of salsa (0.5 syns). Lastly put the cheese on top from your healthy extra A.


Below is the same recipe but it sirloin steak sliced into pieces. Steak doesn't need as much cooking as chicken, so I cooked the vegetables first with half the spices and then added the steak and remainder of the spices for the final few minutes. I served the steak with salsa and a spoon of fat free natural yogurt.
