Roasted Vegetable Fritata

For this recipe I use:

2 whole eggs
3 egg whites
125g frozen diced onions
125g frozen sliced peppers
1 chopped garlic clove

Spray your pan with frylight and put in your onions, peppers, and garlic. Cook until all the peppers are soft and the onions cooked through, then set aside in a bowl to cool.

Mean while crack the eggs into a bowl and mix well.

Clean your pan and again spray with frylight. Pour in the egg mixture and then the vegetables, making sure they are evenly spread around the pan. On a medium heat cook the fritata for around 10 minutes until the base firms up.

Pre heat your grill on medium and pop the pan under the grill for another 10 minutes until the top is cooked through and nicely browned.

Season with salt and pepper, then serve.
