For this recipe I used:
100g sliced onions
100g sliced peppers
Salt and pepper to season
Roast your red onions and peppers in the oven at 200° fan for 15 minutes.
Spray your pan with fry light and transfer your roasted veg to the pan. Whisk your 2 eggs and pour over the vegetables. Mix well.
Your mix should be mostly vegetables with just the egg to bind it together.
Place the pan on the heat for 10 minutes to cook the bottom, then under a medium grill for 10 minutes to cook the top.
Season with salt and pepper then serve.
