Slimming World Tandoori Spiced Lamb with a syn free mint yogurt dip

For this recipe I used: Tandoori Spice Mix (any brand) A cook bag or skewers if you prefer 100g fat free yogurt 1 lemon 1 teaspoon sweetner Sugar free mint concentrate (containing just mint and vinegar) 2 lamb chops 1 red onion Trim all visible fat from the lamb and dice into roughly 2 cm cubes. Place all the diced lamb into a cook bag. Sprinkle over the tandoori marinade. I used 10g of marinade for 2 lamb chops. Shake until all your lamb is coated and place in the fridge for 2 to 3 hours. Chop 2 red onions into quarters, and place on a baking tray sprayed with frylight. Bake for 15 mins at 180°. After 15 mins add your lamb to the oven for a further 12 minutes. Meanwhile weigh out 100g of fat free yogurt. Add 1 teaspoon of mint sauce, be sure to drain off the vinegar from the spoon before adding to your yogurt. Add around a teaspoon of sweetner to the dip. You may wish to add sweetner a little at a time, tasting as you go to get the right flavour. About a teaspoon was perfect for me. Once cooked serve with a lemon wedge and dip on the side. Slimming World Thai Fish Cakes

Ingredients: 500g cod loin 200g raw king prawns 1 small egg 2 chilli 4 spring onions 1 stalk of lemongrass 1/2 red pepper 2 cloves garlic Small handful of coriander Makes 20 to 24 fish cakes. Syn free. Suitable for EESP. Method: Add all the ingredients to a food processor and blend until you have a thick paste. Transfer to a bowl and refrigerate for 2 hours, or overnight if possible to firm up. Use a tablespoon to measure out a portion of mix and shape into approx 3 cm fish cakes in the palm of your hand. Place on a baking tray sprayed with frylight. Cook in the oven for 15 mins or until cooked through and golden brown. Serve with a side salad and sweet chilli sauce - 1.5 syns per tablespoon.

Week 12 Weigh Day!

I weighed in this morning and I lost 3lbs. I picked up my 3 stone award, taking my total weight loss to 3 stone 0.5 lbs. I also got Slimmer of The Month for the 3rd consecutive month with a 12.5lbs loss this month. I picked up the new Magazine at group today which has some lovely recipes in, and some really great inspirational stories. There is also an interesting section about out relationship with ourselves and food. As someone who loves food, I found this a very valuable article to read.  As a treat my husband too me to Mr Pings, my fave Chinese restaurant. I chose my usual, beef in black bean sauce. I asked for extra peppers to boost the speed foods and as I'm still following EESP I didn't have any rice. Well worth the 8 syns. I discovered a new brand of lip balms called EOS, so my husband treated me to one. They quite pricy for a lip balm but so worth it. They are made of organic ingredients and smell lush! Week 12 so far...

What a fab week I've had so far. Firstly I set up my instagram account for my Slimming World. I'm on insta to my personal account, but I never really used it. I wasn't aware what a following there is for Slimming World on Insta. I'm so overwhelmed with the support, motivation and inspiration I've experienced in just a few days. If you haven't already, you can follow me. The link is at the top of my Blog Page. Secondly I've tried a few new things this week. I have been using Maggi So Juicy papers for steak and also Salmon. They are 1.5 syns per paper and sooo worth it. The steak is the best steak I've eaten by miles. I cannot believe hadn't tried it until now. I've seriously been missing out. The papers at 50p on offer in Asda at the mo. Tonight I also used one for my Salmon, which again was amazing!! Give them a go! Today I went to Tesco to tick off a few hard to find items from my SW must have list. I've been after the Groovy Food Coconut Oil 1 calorie spray for ages....
